LUGAW (Porridge)

"Lugaw" or porridge, is the newest business of my brother-in-law and it’s a best seller . You can have your choice of toppings from : Ox Tripe , Chicken , Isaw (Small Intestine of Chicken or Pork) and you can have it with or without boiled egg. Me, I like lugaw even the simplest one , with “tausi” or salted black beans. But given the above choice of toppings, I like them all . . . .with egg alway! Yummy!

My favorite is the porridge with ox tripe or "goto" with lots of calamansi, onion greens, fried garlic then powdered pepper and don't forget, if paired with "tokwa't baboy", it's great!!!.....oohhh, I'm starving already....one order pls!

Hmm, i haven't tried pairing my lugaw with tokwa't baboy. But i will try it . One order for me too, please ! With lots of fried garlic please.

lugaw or Rice soup is our trend everyday besides we can't live without it. In fact you can personalize your lugaw by putting your own toppings. Oxtripe, tofu, pork, chicken they are all good combinations.

Yes, lugaw could be customized according to what you like it to be. In fact, if you go to my brother-in-law's lugawan, you can have all the toppings at an additional fee.

I see so where can I find his store? I love eating lugaw especially during midnight at aling pacia store located at Maharlika highway Cabanatuan city since her store operates during midnight.

We are in opposite sides of the Philippines. You are i think, on the northern side, while we are at the southern side. I guess, Aling Pacia's store, serves delicious lugaws too!

i am already satisfied with the simplest "lugaw" served in the market, as long as it has fish sauce, pepper and garlic. with matching "tokwa't baboy", my lugaw will be better. but of course, if you'll serve my "lugaw" with all those toppings, wow, i feel i am in heaven.

Yes, neildc, actually a simple "lugaw" is by itself delicious already, as long as there are seasonings that we like to season it. But of course, it would be an added treat and taste to have different toppings. Though, it has to be put one at a time and eat it, so you can compare which one is the best. So, a "lugaw" can already make you feel like in heaven?

Porridge with Ox tripe - Lugaw or Porridge?
I like lugaw but without any food artificial food coloring, or any fatty ingredients like ox tripe, intestine, or pork. I can tolerate chicken in porridge though or even boiled eggs. I like it to be topped with lots and lots of toasted of garlic and green onions and also never to forget calamanci juice. The lugaw must also me made of sticky rice not just rice okay?

Oh yes, chicken without the skin of course. Whenever I buy chicken my "suki" knows that it should be skinless, so has to first remove the skin of chicken before giving it to me. Tausi? I have never tried tausi in my lugaw. I will try one of this days. Thanks for this tip!

Well, that's true. A lugaw has to be of sticky rice, so it's good to eat. As to the toppings, chicken is good but it has to be filleted from the chicken not those with skin on it still, added to the lugaw, for those like you who don't want fatty and "unhealthy" toppings. Lugaw by itself can be delicious too, if you put "tausi" as its seasoning. Have you tried it?

porridge - With bean curd only
Well this is a good business. I know you brother will enjoy tubong lugaw indeed. I love porridge but is must be made of glutinous rice only not ordinary rice. I like it sticky and hot and with lots of green onions and fried garlic on top. I also don't like pork in it only egg or fresh bean curd for me.

Of course, a lugaw to be called a lugaw , should be made of glutinous rice. It's what it should be. The toppings does not necessarily be meat. Just like you, i don't like pork toppings. But i like it too to always have an egg and those chopped green onions and fried garlic and some pepper! My favorite topping is chicken bits.

your post is making me hungry!! I also like lugaw. I like it plain with egg or tokwa't baboy (fried diced pork and tofu with a dip of vinegar, soy sauce, sugar and onions).

Hmm, it seems that lugaw or goto and tokwa't baboy is a great combination. I might as well tell my brother-in-law to add that to his menu, in his lugawan.
