Biriyani : It's so yummy

I love to eat Biriyani , a Muglai cuisine , made of high quality rice and meat . The spices that are added are hot but add flavour to the dish . The thought of it makes me crazy . I prepared it several times at home . It was not bad to taste but I must admit that it never tasted like those prepared my Muglai restaurants . What is your experience friends ? Do you prepare it at home . I would be obliged if someone posts here the exquisite recipe .

I have never prepared Biriyani at home. It is not a difficult dish but takes a great deal of time to prepare properly. I do, however, prepare other 'one pot' rice and meat dishes (my favourite being one from Azerbaijan which is a whole leg of lamb cooked gently with saffron and other spices and surrounded by rice). The Biriyanis which are served in restaurants here normally consist only of the meat sauce served separately from the rice. They are either not true Muglai Biriyanis or they are served this way because it is far easier to ladle out portions of the sauce as required than to cook the dish in layers of rice and sauce as it should be. They are considered 'medium' in terms of heat, as most Northern Indian dishes tend to be, and, though chicken or vegetable biriyanis are common, I have never found a restaurant offering goat meat (though lamb would be a reasonably close alternative). Goat is a meat which is very rarely seen in Britain and I haven't seen mutton for years, either!

I learned the recipe from a friend - now I come to think of it, it is Kazakhstani but many countries have very similar ones which vary in the spices used and whether one uses a whole piece of meat or cubes. The one I know is called 'Plov' and I have searched in vain for a description of it as it was taught to me. There is about one method for every cook in Kazakhstan, it seems! I'm sure that it was designed for cooking the less tender kinds of meat (like mutton or goat) because it involves long, slow cooking with rice, plenty of onion and shredded carrot and the rice takes up the juices very nicely. That lamb recipe sounds really delicious; I love lamb, I think it is such a sweet, tender meat! I agree with you about mutton, as a child my mother often cooked mutton but it is very rare now. However I know that amazingly it is VERY expensive and not the 'economical' cut that it was in my childhood! Having said that when you pay almost £20 now for a leg of lamb that amazes me too!!

Is this a good and authentic recipe, Rollylolly? The only thing I have a problem with is garam masala. It simply means 'mixed spices' and I have purchased may different things marked 'Garam Masala' which varied from 'horrible' to 'useful'. Isn't any blend of prepared and ground spices a 'Garam masala'? Even what we buy as 'Curry powder' (Hot, medium or mild) over here? Please advise and instruct!

I too like Biryani very much and often prepare it in my home.My husband just loves it.I usually make chicken Biryani because other type of meats we do not eat. There are ready to make Biryani pastes available in the market which we can add with chicken/meat to make biryani.But fresh spices always add to its taste and flavor.

That's great bamrahkirti...we also prepare chicken biriyani as my mom doesn't eat mutton . You are right there are now so many ready to make biriyani pastes and even dry cooked packed biriyani available now in the market . But the fresh cooked with fresh spices are always the best to taste .

I also love biryani rice. They serve it in some arabic and indian restaurants and they also make flavored seasoning ready to mix with rice. I think that it is an interesting recipe for rice.

I don't know how to prepare biryani, but i do love it. My Indian family friend always prepre chicken biryani each time we visit them at home. But they have to lessen the spicy and make it lesser hot ( i can't take too hot foods) I also like samosa and chai- oh i love it jaiho®

Hi jai ! We also prepare chicken biriyani at home with less spices and oil . My mom doesn't eat mutton so we miss it at home . Usually we take it from some Mughlai restaurant . Hey so you love samosa and tea....come to my place sometimes will prepare all specially for you ;)
