I don't think the "i" in those device names stands for anything specific. If it does have meaning, I would venture that it is i as in personal.

I think there is a meaning on it, maybe "i" in iPhone or any apple devices stands for innovation or innovative because every now and then people are looking something new to them or what's new after a latest gadget released. That's one of the word we can conclude or say about technology. Technology without us is nothing because only new things will be discovered after we've been try and tested the latest model.
