Using broccoli stalks

I have a question about using the stalks of broccoli, I know most people just eat the flowering heads but I'm thinking it's a waste of money to be throwing out the stalks (as well as cauliflower) and I want to cut up my stalk into bite-sized pieces. I know it has calcium in it. I'm positive it's edible. What is you guy's take on this?

It is edible, but may not be digestible or chewable. I have used it, but parts of it get really woody. You can peel the outside of it if it is woody. Boil it in water or stock, and use some cheese to make cheese sauce or to turn it into broccoli cheese soup. I would put onions and garlic in it as well. You can put it through a shredder and make broccoli slaw as well.

I actually prefer it. It is easier for me to digest. You can shred zucchini up that way as well.

We shred zucchini every year actually, mainly for making lemon-zucchini cookies.

Wow you got some great ideas, some of which I am going to swipe.. I admit that I don't like the stalks raw, so what I do is chop them up for soup or stir fry.

Hey, I grew up in a canned food household, so I use to do the same thing, not knowing if it was even edible..So you are not the only one..

Hi, I only cut a slice at the bottom where the stalks are very woody. That I throw out.The rest of the stalk I peel and cut in in 1/2 inch slices. Those I put to boil before the florests because they take a bit longer then I add the florets to the water. Those stalks taste really good.

I have a julienne chopper, I'll use that to cut it up in small peices.

We always use all of the food we get, provided it's edible. You could julienne the stalks and make coleslaw, cut into small pieces and make soup or you could just cook them in a pot and make vegetable broth for a different recipe. Actually, you could do the same with all of the things that you normally would just throw out, put them in a freezer container and wait until you have enough to cook down and use to make vegetable ice cubes for later use in a soup. You are really limited only by your imagination.

Hmm sounds like good ideas, mate. Thanks :-) I just cut mine up and put them in with the rest of the broccoli florets, so I might take them out of the container and freeze them or something.

When I make my beef and broccoli I usually include the stems. Broccoli is a very expensive vegetable here in my country so when I do cook broccoli I make sure that nothing goes to waste. I also like the leaves and stalks of broccoli. I usually make a stir fry from the leaves and stem and these are also delicious. I just hope that the prices of broccoli comes down in the next few days because I miss eating it.

I cut my broccoli stalks up and use them in three ways. 1) I put them in a big pot along side carrot peelings, cauliflower stalks and other veggies, plus a couple of stock cubes and simmer until soft and then puree to make a thick healthy soup to have with thick bread at the weekend. 2) Cut them into small pieces again with other veg simmer until soft, add little milk and butter and mash. Mix together with mashed potato and fry in a frying pan... homemade bubble and squeak. 3) cut in to battons (thin sticks) and sevre with batton sticks of carrot with a savoury dip. I have always eaten them. I just peel the tough skin off them, cut them up, and cook with the flowerets or use right along with them when I make broccoli salad.

I always use broccoli and cauliflower stalks. You will have to peel them because the outer layer is tough, but the inside is very good. I slice them into salads or chunk them and cook with the broccoli or cauliflower. I save them at times until I have enough, then I simmer them along with some greens, a bit of turkey ham (because I can't eat pork) and then put cheese in the liquid and it makes a yummy soup. They sell a packaged salad here they call "broccoslaw" which is nothing more than broccoli stems, peeled and cut into thin strips. It's served like cabbage cole slaw, raw with a sweet/sour dressing.

I have tried making them in soup a few times and though they taste like broccoli the texture is different. It could have been the type of broccoli I used, but I noticed that it has a lot of fibres especially the base stalk and even with the hand blender it did not chop them up enough for it not to give a slight roughness to the soup, so I tried straining it and it seems fine.

Broccoli flower dish - Why not add the stalks and flowers?
Yes you are right, broccoli stalks are edible. It the flowers are edible then why could the stalks be not? In fact even the leaves are. When I visited at friend in Baguio City they served me broccoli dish with all the sliced stalks, leaves and flowers of broccolli with mushroom and it tastes really great. And the same goes true for cauliflower. We are just so used to discarding the stalks and the leaves and for this we waste nutrients.

I actually love the taste of the stalks more than the flowers! We've been having them from ever since I could remember. My father is a farmer and there was a time broccoli was overflowing at home. Just remove the harder outer covering of the stalks, chop em up and they're good to go!

I cut the into thin strips and include them in my broccoli stirfry, sometimes I put them in the juicer when I felt like having some energizing vegetable juice. I peel the stalks before including them in food though, I was raised to eat all parts of the broccoli exceptfrom the roots, since that is the only non edible part, yes the leaves are edible too and they were nice greens,

My mom used to waste cauliflower stalks. But then one of her friends showed her how she can incorporate it in a dish. Now she uses it with potatoes whenever she makes a dish.

First, have you the thought of steaming the entire veggie? You could always chop the stalks and save for later ? Or, use the Jessica Seinfild method and blend those extra veggis into brownie batter. You can't taste the vegetables . Perfect for kids that refuse to eat vegetable.

Hmm, no I haven't heard of either method, but I will try them. Do you blend the stalks to a puree paste for the batter?
