Carrot Skins

I heard that some people eat the skin of the carrot. I know most of us peel the carrots, but today I was looking for the peeler but both of mine were broken, and so I went into my utensil drawer and pulled out a silicone scrub brush, and under running water, I scrubbed the carrots clean (what a HUGE difference in the colour!!!) and noticed that the carrots were just as orange as if it was peeled. Amazing. I remember carrot peelings how sometimes they were so thick, and thinking it's a waste. So I cut them up and put them into the pot to cook tonight.
I betcha anything my family ain't gonna notice the skin's on the carrots!

It's true! You might still have taken off more than you needed to.
Even better, you can do the same thing with apples and potatoes with great results. For potatoes, the skin holds a lot of the minerals of the potato, so it's healthier too.

Some fancy eateries serve "smashed potatoes" and all that means is that they cooked baby potatoes in their skins and mashed them like peeled potatoes. The only time I peel potatoes is if I think the people eating them won't. I shred them peel on to make homemade hash browns.

We usually use carrot to make food....My mom will not peel the carrot's skin....
She will only wash that very well...I think it's very Nutritious food...It contains a lot of vitamins.....Try the carrots with out peeling the thin....

You got to be careful with some veggies though, because if they are not organic, and you don't really wash it well, you can consume some of the pesticides. That is why i do peel, unless I grow it myself or buy organic.

When cooking with carrots, I do not peel carrots, I just wash the carrots until clean, then I cut the carrots. My mother said, carrot skin has benefits for body, because the skin carrots contain beta carotene which is quite potent as an antioxidant.

Yes. we can eat carrots without peeling also. sometimes they can be taken as raw -salad. Otherwise it can be cooked also. I eat carrot as it is. This comes out of practice. Your digestion system must be able to take that load and digest. I am ok with carrots before peeling also.

hahaha. I wanna try that one too. Carrots cooked with its skin on. I think it would just taste as good as it taste when it's peeled. I like carrots in whatever way it was cooked but I know a lot of people who don't eat carrot. The vitamins you can get from carrots is essential to out health specially for out eyes. I think everyone should learn to like to eat carrots. Your family will surely love those carrots peeled or not.

I always just scrub them. I do cut the tops and any blemishes off, but other than that, the carrot is good to go when it has been freshly scrubbed. You are less likely to peel off good nutrients that way.

I am glad that I am not the "odd man" out here, as the veggie peeler lies mostly IDLE in my home. Carrots never get peeled, just washed...Potatoes only get peeled when I have heavy skinned Russets for "company mashed Potatoes. Sweet potatoes cooked with skin on, too!
Sometimes, I think I take frugality..almost one step too far! Orange, lemon or lime, I always grate the peel first, as it always can be used in a recipe! I freeze the gratings in my ice-cube tray (about a Tbsp.) then baggie them! If the Apple must be peeled, freeze the peels, boil in water as the skins are very high in pectin. All this is after washing & polishing. Pesticides are applied to these fruits with a wax base (to keep from washing off in rains)so polishing is a good idea! As you can tell not much goes to waste in my house!
I just hate it when a recipe calls for lemon, lime, orange gratings...and you have to go buy one, for that reason..LOL!

That's a good idea, I never realised you can freeze citrus peels. Ii'll do that whenever we purchase oranges from now on. Thanks! :-)

Interesting I wouldnt have thought to just get a corn cob brush and wash the carrots clean. I dont have a corn cob brush anyway though. If I didnt have a vegetable peeler then I would just scrape the skin off with a knife. It takes longer though and makes even more of a mess. I love to peel potatoes and carrots with a vegetable peeler theres something relaxing and fun about it.

You know, you brought up a valid point - "mental thing" - it's really what we were taught in society - to throw out our peelings, stalks, etc, and really, they're all edible. I never though of it in that perspective, but thanks for bringing it up.

Taking carrot during meals or eating it in other times is good not only for healthy body but also for good eye sight.
