Kare-kare is one of my favorite foods as well as my daughter’s and husband’s. My daughter would even brag about my kare-kare to her boyfriend who would also brag her lola’s , as she has told me. But my daughter said, "wait until you have tasted my mother’s kare-kare". Hmm, when could that be? Usually, the main ingredient of my kare-kare is the oxtail. But my husband doesn’t like it because he said it’s not meaty. Hence , I would sometimes use “pata”, (thigh part of the pork). But my daughter doesn’t care, as long as it is kare-kare. It’s really tedious to cook kare-kare. You have to cook separately, the “bagoong” (salted very small shrimps). Then , I would chop some peanuts to put into it, so you can chew them aside from the peanut butter that I would mix into it. Then, I would have the “atsuete” fried, to bring out the color. Oh, how it would spatter ! But overall, I like cooking kare-kare, because my daughter and husband likes it so much. The joy in their faces as they eat it, is more than enough to take away my tiredness.

Oh SIMPLYD, here you go again with foods, you know my weakness are foods.... I also like ox tripe on my kare-kare yum! have you tried it? and also instead of atsuete, sometimes I use squash.

I have never tried ox tripe in my kare-kare. I don't know if my family will like it. But i think they will, because when we eat kare-kare at Max's , it has ox tripe and they eat heartily too. Isn't the atsuete, to add nice color to kare-kare? So, how do you use squash? Do you mash it ? Is it to color the kare-kare?

Ah okay. Maybe i will try it next time. So, you don't use rice flour anymore to thicken the sauce?

Squash has nice yellow orange color too, yes, I boil it first then mash it. It also adds up to the flavor and creaminess of the sauce

It Sounds so complicated.I feel as if I have smelled your cooking.What interests me most is that its main ingredient is oxtail.Besides that ,It is said that it consists of peanut sauce,varieties of vegetables and others.

Yes, it's a very delicious dish actually. I just don't know if this is a Filipino dish or it is also being cooked in other countries. What makes it delicious is it also has lots of vegetables, aside from having peanut sauce and oxtail or ox tripe or the front leg of a pork as main ingredient.

Yummy! I have not tried cooking kare-kare (too intimidating LOL) but I do enjoy eating it. Using pork leg sounds like a great idea too. Have you tried any of the pre-packed mixes like Mama Sita's? They can cut down on prep time, I assume.

I haven't tried that, but my friend had already . It's also okay, but the homemade mix is really much delicious. Nonetheless, the secret in a delicious kare-kare is to put a generous amount of peanut butter, that is a bit sweet and the bagoong that goes with it.

I really love kare-kare specially if it has a lot of bagoong. I eat too much when my auntie cook kare-kare.. I want to try to cook it but i think it take so many procedure before i finish cooking.

It's indeed an intricate dish my friend, so tedious to make. So, better have it cooked by your auntie. Yes, bagoong completes kare-kare. I would saute the bagoong with some brown sugar and vinegar to make it so tasty. The bagoong by itself alone, can already be a partner to the rice.

Yes kare-kare is delicious but the budget is high could be recommend to ordinary family with less budget. There are other delicious many which are low budgeted only.

Yeah, it's really a costly dish, because the main ingredient already costs much. In addition, the peanut butter is costly too. Though as to us, i only cook it , whenever our daughter comes home for a vacation from her school in a far away place. And it's only for once when she's on vacation.
