Songs you'd love to learn how to play

I'm a music teacher (guitar, piano, singing) and I teach in a school where they don't learn how to read notes, unless they really want to learn that. Most kids or adults who take classes with me want to learn specific songs. Some of the pupils choose their own songs, but others ask me, if I don't have any ideas. Usually I have enough ideas, but of course we tend to mention those songs we love ourselves. Though I am a young guy, I still will usually go to old jazz/swing standards and I don't always know what they really would love to play. I also have older students, but they sometimes want to play stuff from the seventies or eighties and usually you can situate me musically in the thirties to sixties. If you were in one of my classes what song or what songs would you really learn how to play?

I would love to learn how to play Cliffs of Dover by Eric Johnson. All though it might be too advanced for beginners.

Paradise by Coldplay or Fix You by Coldplay, because the last song I mentioned if a really emotional song for me. With good and sad memories.

I very much like the song Fix you. It' s not that difficult to play on piano or guitar, but it's nonetheless a really beautiful tune. Thanks for the good tip.

I remember a time in high school a buddy of mine spent forever trying to learn the theme song for Halo on his baritone. It finally got it, it sounded pretty cool. But me personally I think I would want to learn an acoustic version of down with the sickness by Disturbed.
