Best way/place to publish a book and or poetry online?

Hello,
I was wondering what are some good legit sites that to submit your book and or poetry to get published. I know there is quite a few out there I just don't want someone stealing it or not giving it a fair chance. What are some good pointers before submitting?

I am starting this process also. The only one I recently hear of is LuLu.com I heard that you can publish to kindle somehow.
