A 15 minute pasta dish for a tired and hungry father

My dad and moms meal for the evening - Spaghetti with bacon,sun dried tomato,oyster mushroom, and dried basil (chopped fresh celery leaves for garnish)

Today my dad came home early from his work and he was hungry (as usual) but my mother was busy doing her laundry so I came to the rescue (i usually don't do much savory dishes)and prepare something easy and comforting that will make my fathers empty stomach rejoice.So i grabbed some sun dried tomatoes that i made last week (they were soaking in olive oil,garlic,peppercorns,dried oregano) some oyster mushroom, bacons, dried basil.And turned it into a wonderful pasta dish, I used the Italian way of cooking the pasta noodles they should be aldente and finish cooking them with the sauteed mushroom with the rendered bacon and add a dash of dried basil and some of the spaghetti stock cook for few minutes and done. They enjoyed eating it, Im even surprised my self (not really confident in savory dishes) with the amazing burst of flavor from some simple ingredients. Sounds like a great fairly simple and straight forward meal that has delicious flavors. I will have to try this at some point if only I will be able to remember next time I am tired and get in late.

yes its a very straight forward dish but it burst in flavor (thanks to the oyster mushroom and homemade sundried tomatoes) have a great day ruthy !

I think letting the tomatoes soak like you did really brought out the flavors. And then the olive oil helped too. Herbs really seem to make a dish delicious. Can't go wrong with garlic either. Always brings out the flavor of things. And i love sauteed mushroom. Always a hit. Happy cooking and Mylotting!!

I think that is one reason I don't go in for the dried tomatoes much. I can't handle salt. Ugh!

I think the slatiness was okay i didnt add any salt to the pasta dish anyway so the dried tomatoes where the ingredient that adds saltiness to the dish and wraps the entire dish.

I know right I saw it in the net and i followed it (my father bought too many tomatoes that im scared it will rot in the fridge so i decided to dry them). the sun dried tomato were a little salty (I guess that is how it should be it has a pleasant saltiness to it). happy myloting!

aww I really didn't measure it (it is cooking anyway...) I just boiled some spaghetti and cook it according to its package, rendered enough bacon(enough for 4 person...), sauteed the mushroom (depending how many mushrooms you want, but try to keep the balance) with the bacon, add the aldente pasta, add a little stock from the boiled pasta, then after few minutes add the sun dried tomato (1/2 cup I guess...).

My mouth is really active after reading the whole discussion here. I guess the good ingredients were the dried tomatoes with olive oil , the garlic and the mushrooms. Some salt and pepper. I can say those are the minimum requirements for a good sauce. Mushrooms are just tasty when fried. Awsome snack. Some people told me to add cream to the garlic and mushrooms if not added the tomatoes sauce. Bon appetite.

Yeah that is a good idea its a simple yet a very pleasing dish as what Nigella says "I don't believe you can ever really cook unless you like eating", Im sure you will, just try to find your self in the kitchen and after a few times of cooking you'll get familiar with what goes better with that and this and make your own version or original recipe . have a great day cooking

Well i guess its a good thing that you had some of those sun dried tomatoes you made last week as that helped you out because you didnt have to do to much with the ingredients in the pasta and you were able to make a dinner pretty quick then. I would like to do things like this but that never happens at all. I was thinking about bakeing a brownie tonight so i can have snacks to bring to work the rest of the week. Thats really all i can do and of course cook dinner when i get home too as that will take about 30 minutes to do. The sauce you made sounds delicious! I love to make pasta dishes and I also love the pasta al dente. When my grandchildren were little I knew that I would always get applauses with a pasta dish. CHEERS!!!

The sauces was really simple its just the deglazed bacon and mushroom while cooking in the pan (they create those little golden brown stuff)by the use of the stock from the pasta sooo simple. Its nice that your grandchildren are awesome audience and eaters while you cook and serve them food

Isn't it great when we can find something simple to make and it be filling and good as well? I made bratwurst on the grill yesterday. tonight I am making a salmon loaf. If anyone would like the recipe throw me a message. It only contains 5 ingredients and is ready in 30 minutes of baking and I usually make Macoroni and Cheese to go with it. Happy Mylotting everyone!

Wow, peppai, that sounds like a very scrumptious dish.. your father should have been very pleased especially when he was tired and hungry. I am sure your mom had some also because she was very happy and probably surprised also..It should give your a little more confidence to spend a little more time in the kitchen...See, you don't have to be a gourmet cook to make people smile....

it happens that many inventions do happen as an accident..so is your recipie of pasta..it sounds interesting and a nice mix of flavours..i will certainly try it on some weekend...
