Vegetables are best!

Vegetables are best, don't know how far you would agree with me on that... but we are all so different.
You will know that I'm well into my veggies and using up the unuse veggies into wonderful soups and casseroles so we don't waste anything and save money and really get a free meal as well.
Well I was wondering how else I could use up these veggies and I thought I could make some veggie pate/spread to spread on my bread and crackers, I have looked at some recipes sites but can't see anything that I really like or that is very easy and quick to make. I don't want ot use cream cheese either in my spread.
Do any of you make veggie pate/spread or know where I can find REALLY simple recipes as I fancy making something different with my veggies and in my sandwiches.
You never ever fail me on mylot!!! So please don't fail me now!!

Do you have a blender? I would take the first few favorite vegetables. Cook them up like a soup and then blend them into a paste. V-8 yourself.

Oh yes I do have a blender, just a cheap one but boy it blends the veggies real nice ot make my soups.. leek and potato soup for tea tomorrow night. The rest of the family have got homemade cheese and bacon scones as well, I shall have some brown bread with my soup.

There is no real recipe... I just make a basic scone mix up... 8 ozs sr flour, rubb in 2 ozs of marg or butter, mix in about 8 ozs cheese and cut bacon pieces, mix together with a quatre pint milk, I just pat mine into a roundish shape and then cut into eight triangles and put into oven..... cheese and celery are nice as well

Use beans, put canned or cooked beans, like pinto beans, lima beans, kidney beans or chick peas into a blender with a little juice or broth, blend until the right consistence for dips, then use your other veggies to scoop up the dip. I make my dips rather strong, using chillie pepper, onion powder, garlic and salt. A little lime juice or lemon juice also adds flavor, other herbs can be used. You should have a great time being creative with bean dips.

I really like to eat vegetables as well, but I've never thought of making my own vegetable spread to use on the food that I'm eating.
I will either steam my vegetables and eat them in their natural glory or I also like to cut up a variety of vegetables, such as carrots, broccoli, cauliflower and cucumbers and make a ranch dip that I can dip them in and eat them raw. That is one of my favorite ways to eat vegetables.

vegetable pate?? i loveeee pate. i eat chicken liver pate quite often, but would love to know something more about this vegetable pate :) i can't offer any recipies but i wanted to share your love and maybe see some recipies on here myself :)
i love vegetables. there is nothing better. they transform utterly everything! and avacado is the most versatile one of the lot i think :)

I don't know of any recipes but I make a chickpea and roasted veg spread. Really easy, roast up any veggies (I tend to use squashes, carrots and parsnips a lot), take a tin of chickpeas and blend together with some roasted garlic. Really good on toast on a Monday morning :)
I must admit that it's quicker for me as I use leftovers from Sunday Roasts to do it usually! But you can roast up veggies just for that!

People really should have more vegetables in their diet because vegetables, many of them, have iron in them, and people need iron if they want to prevent themselves from having anemia.

I always make soup out of my leftover veggies, whether they are raw or cooked leftovers. I even make soup out of leftover veggies from my favorite restaurant.
I do also sometimes put leftover spinach in the pasta sauce.

vegetables is good for health. I try to take them regularly but i find it is very hard to make it.
Some vegetables have strong flavor and uncomfortable taste, so make them easy to be accepted a good cook method is badly needed, but in most cases, they are badly prepare and not good to eat.
My mother try to mix vegetables into the meat and use it as filling. The vegetables is full with the taste of meat and good to eat.

I'm a veggie person to. I'm not sure of any recipes though just go to allrecipes.com and you should be able to type in what you're looking for and hopefully something will come up. You could try making veggie dip that is also good. Hope you get what you are looking for and it turns out yummy. Best of luck!

I like the ideas you've already been given of using the chick peas to create a paste & then blend in your veggies. Or do you have some form of pea in your veggie selection that will make a good paste??? You might need to take several ideas & turn them into one of your own. You might be able to get rich quick with what you end up with...good luck!!!

Go to www.allrecipes.com for your pate. It contains wheat, veggies, loads of spices and sounds absolutely fantastic...not a smidge of cream cheese in site.

Vegetables are the complete foods that you'll ever need. They contain vitamins that you could not get if you only eat protein diet for example meat. Other effects that vegetables have that people doesn't know is that some vegetables do actually burn fats. So it means that even though you are eating, you are still burning fats and calories so you will not be afraid of getting fat.

It is better in the times of youth that vegetables must be introduced to the children. The nutrients of the vegetables makes children healthy. When they are already in older ages, they are not easily attracted of any diseases. They are also strong. Those children who wants meat all the times, since her childhood, is easy catch disease.

I am not a big veggie eater and never have been. I don't like a lot of vwggie's either. I do like some soups with veggie's. I will eat casseroles but if it has peppers in it for get it! I can't stand peppers! I do like lettuce but not spinach and all that trash that can be found in some lettuce mix! If I did like more veggie's I would eat better which I don't!

Hi Anne. I don't use alot of recipes and don't know alot of vegie receipes. My mom and daughter make a killer vegetable soup with all vegies in it. Nice on a cold winter day. (which I hope is about over).
My mom has me boil potatos and sweet peas for her together. Bring them to a boil and then simmer about 45 minutes or until potatoes are nice and soft. Makes the soup in there a little thick by stirring every little while. I do corn with potatoes as well, but to me the pease taste much better. I didn't think I cared for sweet peas til she had me do that several times. Now they're so good.
I love bananas too!

Weather has been nice here, but has been foggy and cold most of the day here.
Sweet peas, boy you had me confused for a mo but am now laughing, when you said sweet peas I thought you meant the flowers sweet peas and was wondering why you were putting flowers in your soup! Re reading it I now know its peas peas and peas, those lovely little round green balls!!
