I don't really think that a person could live without eating, and just drinking water, for 60 days. Our body needs nutrients for it to work. Water, though essential, does not have nutrients so it would not make our brains, muscles, etc. work to its function.

It is very possible since our body is made of 60% water. I think if you are able to provide organs like brain and lungs with the water that they need then it would be possible to stay for such a long time without food (brain is composed of about 70% and lungs 90%).

It is possible. However, I think that without food, we would be in a state of
high inertia, and unable to work at all.

Yeah, I think it is possible but in very rare cases for sure, and I can only imagine the person's mental and physical state after that. He'd be very frail and weak for sure and possibly not in his right mind.
I remember one similar case and I learned about this when I was in college during our speech class. Our teacher handed out a poem to us and written on top of it was a little story about its author. It said there that this author made that poem when he was in prison with no food (and also water I guess) and he was the only one who made it alive because of that poem. I guess it kept his mental state balanced and helped him achieve a sort of like a "mind over matter" state or something.

Well that is an extraordinary situation for sure to say the very least. But it is just out of the ordinary, it might really not happen all that often. Although if you have water, then your chances are going to be far better than having food. Of course, one must wonder about the mental toil about being trapped in a snow covered car. Even if you are mostly physically fine, I just wonder how mentally racked you are.
Two months can seem like a long time when you are alone. It doesn't go fast when you have absolutely nothing to pass the time. It is fortunate that there was water easily accessed. Although I doubt this situation would really be something that would be the most ideal. Still it is an interesting situation and I suppose its possible, but perhaps not ideal.
