A questiom for culinary arts/commercial cookimg NC II graduates

I was just wondering if there is really an exam for you to be considered a professional chef which includes cooking some dishes in a fixed amount of time.
I heard it from a chef while I was still doing my OJT. He said that there was a test where you would have to cook an appetizer, main course, and dessert to be considered a professional chef. I don't know if he's just f*cking with me but I've never heard of it.
And please tell if you are a culinary arts or tesda graduate and which school you came from.
