At my son's school Christmas party last year, we were asked weeks before to bring pot luck for the occasion. I was asked to bring fried chicken. To be able to save time since the party will be held early morning, I bought 2kilos of already grilled chicken cutlets the day before and kept them in the fridge. Then I woke up early the next morning and rolled them around in beaten egg and bread crumbs, and deep-fried them in corn oil for 1 minute on each side. The chicken was a hit and got a lot of compliments for them.

Awesome! That's a really unique meal you fashioned together there. I never thought using already cooked chicken to make fried chicken would work, but you've proven me wrong! I'm glad it didn't end up getting dried out and the breading stuck to it properly. On the other hand, now you have me craving fried chicken! I have the ingredients here at home, so now I think I'm going to prepare a bit tomorrow. Haha!

That sounds delicious! I love a good piece of fried chicken every once in awhile and home made is just the best! I'm glad it was such a big hit for everyone. Did you use any kind of special bread?

That sounds like a terrific way to be certain the meat is cooked without burning the breading. I may have to try that sometime. I have always wondered if it would work, to pre-cook the chicken before breading it but was never sure if the breading would stick to it properly. Thanks for telling me it will!
