I am wondering if anyone else has ever been under-diagnosed, that is doctors brush off symptoms and you end up diagnosing yourself or fighting over and over to finally get somewhere? Do you have any ideas on how to better express yourself to help doctors listen to your concerns?

Unfortunately yes I have done that. I had strep throat once. I could feel it coming on so I went to the doc early so I could try and get the antibiotics to fend it off early before it was full blown and contagious. I went I told her how I felt and what I thought it was and she blew me off because when the test came back it was negative and she didn't give me anything to help me. 3 days later I had to go back because I couldn't swallow anything.l And what do you know I had full blown strep throat. I have yet to find a way to make the doc listen. Other than to stop her and tell her what I think it is and that I want her to test for it. Which is tough when you have a dr like mine that likes to run in the room diagnose and get out and you barely get a peep in to tell her how you feel. But that's the best way I can tell you. Tell them to stop and listen to you for a moment because it's your body, you know how you feel, and only you know what is going on in your body unless you are on an tv episode of House. But back to reality I hope this helps.
