Never heard of people getting cavities due to apples to be honest so can't really comment on that part. I think though that particular saying is more a sign of saying 'eat healthy and you'll need to see a dr less'. But not everything healthy (even fruit) is always that good for us for various reasons. Although I did find this page about that saying

But that would be eating a-lot over time. Although you said you ate quite a few I didn't expect it to be that many, unless your dental hygiene is poor which would of course increase the rate. You have to remember a-lot of fruit is full of sugar and acidic's so that would be the most damaging part

How much is much? I think apple is a fruit that can help in getting rid of some of the health related problems. As usual there is a limitation to every thing and so is with apple also but the question is 'how much is really much' I don't think any one can eat 'too much'.

It may be true, it may be not. It depends. The phrase I think
must not be taken literally. I think the apple must represent
all of the fruits that contains a lot of vitamins and nutrients
and the doctor must represent the sickness. So for me, apple doesn't
represent only one fruit. In order to be healthy, we should eat a variety.
Because the variety of nutrients and vitamins will keep sickness
and illnesses away. Do you think eating only the apple or only
the same vitamins and nutrients a day can make you healthy? No.
Because different fruits contain different nutrients and eating only one
kind of fruit prevents you from getting the other nutrients that the other
fruits contains. It takes varieties of vitamins and nutrients
to become healthy.
