We love Roast Beef

I wish I could say I'm having this very thing tonight, but I'm not. We do love our roast beef. The last one we had was a few weeks ago and was the first time I'd ever cooked a chuck roast. I've always cooked bottom round roasts like my mother used to do. They don't fall apart as readily as the chuck roast does, but can be cooked until they do if you like them that way.
Mom used to cook them on top of the stove (I don't remember any roast ever going in the oven) and they were so flavorful and tender. On occasion, she'd cook them until they fell apart and then add barbecue sauce to them for BBQ beef sandwiches. I've cooked them until they fell apart and had hot roast beef sandwiches with the shredded meat. This last time, though, we ate the beef and broth over mashed potatoes and it was wonderful!
Although I don't have any roast in the freezer (except for a small portion of that chuck), I was thinking of putting several steaks in the crockpot and cooking them like I would a roast until they are fork tender. Since we like it shredded anyway, the end result should be the same, don't you think?
I usually add onion soup mix and a bit of water to the pot for flavor and moisture. The last roast I made I used beef broth instead of water. I don't always have any on hand. If I use a full-sized crock, I'll also add carrots and potatoes. I love how the flavors blend in the broth for the gravy.
I've even made German Beef Rouladen which is not unlike bracciole in appearance, but the flavor is tart because of the beef rolls being stuffed with pickles. The gravy you get on this dish is wonderful!
What seasoning do you like to use for your roasts? Do you brown them first? Do you cook them in a crock, on the stove or in the oven? Do you do anything unique to yours that's worth sharing?

Hmmm, I love Roast Beef too! I like to use soy sauce, spring onions, pepper powder, salt, olive oil and a tiny bit of sugar mixing together to dress the steak and leave it inside the fridge for 4 or 5 hours. And then grill it in the oven for 20 minutes. It is just so yummy and special.

I also love roast beef dinner. One great tip my grandmother used was to put a package of Lipton Onion soup mix, over the top of the roast before putting it in the oven. Also cut up a big onion and cut it in chunks and let them boil along with the roast. It yummy for making gravy after also, can't have roast beef without gravy. Left overs the next day are awesome..Happy cooking and eating..

well i like steak and pork chops grilled up on the stove top .. i find gives nice juicy taste and when cook ham i put in the bigger pot and not in frying pan use a pot and water and boil it on the stove till it is tender or about(1hr30mins) is when usually take it off or put potatoes and veg in with the big pot and have boiled dinner only done it once but it turned out not to bad..

I use a brown steak seasoning from my local meat shop. It is there own creation. Not sure whats all it is made of. But it is really tasty.
All the roast I cook I tend to cook in a crock pot. As It will slow roast which in my opinion makes the roast taste so much better. Plus it always falls apart to the touch.
I always add carrots and potatoes to the mix. So I have a complete meal when done. All I have to do is make gravy from the drippings.

Hubby would cook it in the oven, literally roast it. Mom always put it in an iron skillet on top, I believe, or in an electric roaster. Hubby does not want me to cook it in the crock pot, he says that is "boiling it". We brown our roast first. I think ideally we coat it in flour first. I like carrots, potatoes, and onions and garlic on mine.

After the roomie kept buying chucks and they were so loaded with fat, I told her that they may be cheaper, but they weren't worth eating. So now she buys a better roast.
Anything special? not that I do... but I'm not much of a cook...
Having said that, the roomie got hurt and I've been doing the cooking since Thursday... and I fixed the food on Monday too, because I wanted to eat something and she didn't want to make it.

I am greedy big baby...lol so that i could eat any type of food, boiled, fried, roasts, etc...I can cooks some delicious dishes but roasts type, i haven't tried to cook at home yet. All roasts food, especially roast beef, i buy/eat in restaurants...^^ I can test it is delicious or not, but honestly i don't know how to roast it...lol
