Finally Got the Eggplant Right

So I was finally, after many tries, able to fry eggplant so that it got all mushy and good. This is a tricky fruit; it likes to soak up the oil you cook it in and get all spongy and gross. At last, I took the advice of like every cooking site in the world and salted it first. Just like Mom used to make. My question: what's a food you love but can never make it right for yourself? Have you been able to conquer it?

Eggplants can also be good when they are "spongy". I cut eggplans in two pieces, add olive oil and put them in the oven : they become perfectly "spongy" and ready for an eggplant caviar. I have never managed to cook correctly pumpkins for anything else than a soup.
