What would be a good side with this meal?

Hi there,
I'm currently making supper for my parents, and would love to make a delicious meal for them. I don't mind putting a lot of effort into it! I've decided on making a pork tenderloin stuffed with a goat cheese, spinach, and roasted red pepper filling. The recipe originally called for sun-dried tomatoes, but strangely, I can't find them anywhere. :|
I've roasted a few extra bell peppers for a side veggie, and was also considering doing some roasted garlic lemon broccoli.
I'm trying to decide on the carb/starch side. Should I make some plain white rice, as all the other parts of the meal are full of flavor? Or, should I try to make some garlic bread (if I can find a baguette in my pantry)? Or, do you have another suggestion for something that would go really well with this meal?
Please give me your suggestions :)

since you have done so much with the other stuff i think that if you make some maccoroni and cheese or maybe some mashed potatoes that would be the perfect thing for the meal in my opinion. i do like the garlic bread idea tho :) i do not like rice very much but i also think that a lot of people do and they would probly enjoy that with the mean but i really think that the maccoroni and cheese or the potatoes will make the meal feel complete :)
what are you making for dessert? or did you decide not to do that since you have done so much other stuff?

mmmmmm truffles sound do good lol wish i knew how to make them but i do not cook very well so i am sure that i would find a way to mess them up hahaha that sounds really neat tho i know my kids would love them if they looked like lady bugs :)

I'm too late for the recipe itself, so let me just add this.
If you get some fresh Roma tomatoes (those smaller ones) and put cut the oven to warm and put them on the rack for 12 hours, you'll make the best "sun-dried" tomatoes you've ever had! The flavor gets concentrated and a few tomatoes subsequently go a long way.
