I made the most awesome hot chile sauce!

I had planted these peruvian chiles, a lot more hot than ours. The chiles turned red and were so hot I didn´t know what to do with them. So I seeded them and cut them and cut onions lenghtwise. I heated olive oil, threw in a garlic clove and half a cube for spices and then fried the peppers and the onions in small batches so that the oil would be heated. I then let it cool a bit and added some vinegar. This last ingredient was an idea picked up from a jalapeño chile sauce can I had. If you try it, I learned something and used my knowledge the second time. I used latex gloves to cut up the chile and threw them away. The first time I had to remember all day not to place my hands near my face ans specially eyes.

Not a fan of super Hot foods but those Peruvian chiles that you planted looks beautiful with its stunning Red color. Ohhh by the way you can dry them whole for some future uses you just have to dry them under the sun using a black baking tray to maximize the drying (black absorbs light fairly quicker than doll colored baking trays). yeah handling chiles needs precaution dont wanna get it to my eyes and lips .... I prefered to cook them ripe than to dry them. It´s unexpensive here to buy dry chile and I don´t have a good place to dry them.

There are some chiles here that are sold dry in long strings. I like them as decoration for the kitchen.

ahh... lol sorry... hehehe atleast i tried suggesting somehting those kind of chile are hard to find here in the Philippines and I only have those small one, Birds eye chili i guess. and I dry them i like how they look when they are dried. And your chile sauce recipe is so simple makes me wanna try making one.

This seems to be tasty recipe, I have to try one day, although, jalapeños is what I have at hand, actually, I have a plant in my back yard, and it has flowers already, and your idea of the rubber gloves is very clever,

I have been told, but, I have never tried myself, that, adding some sugar to a meal that ended way too hot, reduces the hot in it, of course, is just a little bit, nobody wants a sweet guacamole, but I don´t know for myself if it actually works.

My sauce will be an adition to other meals. It cannot be eaten alone. And if I want a bit of it less hot, I can always add some more olive oil to the amount I´m using.

The can where I got the ingredients (some of them) ws one of jalapeños. I wanted to plant the normal chilean chiles but my daughter gave me seelings of this type. I did what I could and I´m happy. The two medium sized jars will last me all year as they are very hot. Last week I used a small amount of the oil there to make a guacamole and is came out quite hot.

My husband loves hot chili sauce, but for me, I cannot eat it. Hot chili actually takes the lining out of my mouth and makes me quite ill. My stomach has no tolerance for it. My hubby cannot eat regular green peppers, they have an enzyme that gives him an allergic reaction, but once they turn yellow or red, he is fine with them because the certain enzyme has changed to something else. We both eat mild green chili peppers or yellow banana peppers, even the little cherry peppers. He uses a lot of salad peppers also. Love some of the green chili peppers stuffed with cheese. He loves to fry his and I cannot use wheat flour as a coating for mine, but I am learning to use other types of flour on mine. He makes his own picante sauce so I'll give him your recipe and let him try it with some of his hot peppers. He doesn't like jalapeño sauce, but I bet he can use other peppers he would like with it. Years ago, with my first husband, I raised chili peppers in my yard. I had seeds and one plant came up that wasn't like the other banana pepper plants or other peppers like cayenne that I recognized. I learned there are many mild chili peppers. I picked the green pod and took it in the house and told my husband I didn't know what it was. He told me there wasn't any pepper he couldn't eat. He took a big chomp out of it, and the next thing I knew he was shoving ice cubes in his mouth and the partially uneaten pepper was left laying on the plate. I decided to leave it for a few days and see what happened to the uneaten portion. It turned a very bright red. Since then I've learn it was a type of pepper called habanero chili, recognized as one of the hottest chili peppers. Needless to say, the plant was removed from my garden and I never heard my first husband claim there wasn't a pepper he couldn't eat again....hahaha. Thanks for the discussion.

Thans for a very nice answer. I love suffed chiles, but these were way too hot. Next year I will plant the local, less hot, variety. I will still have some plants from this year so that I can make more of this sauce.

Sounds good , Marg. i love things like that. If u ever get into trouble w/hot pepper on your hands as i have beat u some egg whites & put your hands in them & that will take the burning away. VOIVE OF ECPERIENCE HERE, LOL.

I´ll do it, Jo. But I rather hope to remember to wear gloves. I have lots and lots from the time I was at the hospital. They charged the gloves, but they opened a a package every time they wanted a pair. So I could bring them home as so I did. I had paid for them.

Hi Marg, your chili sauce sounds very delicious. But, i don't take very hot chili sauce. Only my father and my sisters loves very hot and spicy chili sauce. Even i can't stand cutting up chillies since they makes my both hands hot. But, i am still wondering at how my father able to cut those chillies without wearing any gloves. and he don't feel the hot of those chillies. only recently, since he had been diagnosed as having high blood pressure, he don't take very hot and spicy chilli anymore.

You're really a cook :) You have many ideas about foods. I believe that the chili sauce is delicious! I don't try to do it because I must buy chili for the market. And the price is not cheap!

I love gardening too. I got this chile from some seedlings my daughter gave me. I planted some in containers and that´s what I got. I didn´t know this kind of chiles and discovered that they were much hotter than the ones I normally use. So I created this and it´s very yummy!

I love cooking and like to make different dishes when I have time. I think you should have great time cooking. I think sauce is something one need to make in order to make the dishes. I think it is great to do different dishes that one can rather than buying it from the shops.

That's nice. I've been searching for a nice chili sauce recipe. I think I could try this out sometimes. I always got dry chilies in my kitchen and just throw them away. Because when I bought a pack of chilies I wasn't able to consume them all. Thanks for this topic.

This recipe was made with ripe but not dry chiles. If you buy too much ripe ones, maybe you can make the recipe then. But if they dry out, you can still save them and soak some and throw it while making a hot dish, such as a hot stew or chile con carne.

Whew, HOT!!! We raised hot peppers on our farm when I was young and I hated harvest time. The oil from the peppers got all over me and my clothing, it was awful. My mother would make all types of pepper sauce and people from all across the community would come hoping to get a jar or two to take home with them. I never liked spicey hot food as a kid but I have learned to eat it as an adult. I don't know if I could handle your Peruvian chile sauce but it sounds really good. MMMMM, yummy.

You are a lot braver than I am...I can't eat hot stuff at all! I can tolerate cooked green peppers and onions, but I can't deal with anything hotter than that. I'm not really into vinegar either. But I've always been somewhat bland I guess...It does make sense to use the gloves because that can be nasty on the skin! Enjoy your chiles!

I was raised in a hot peppers loving culture. My mother´s side of the family is from the north of Chile, in the frontier with Perú. Perú has many kinds of hot chiles and many ways to use them. My husband came frm the same part of the country and he also leved hot food. I learned little by little. I worst thing about not wearing gloves (disposable ones) is later, if you rub your eyes with your hands. My skin is still more delicate since the chemo and hot chiles will not help it.

When I cook vegetables I often add a chili for the taste, but those we are growing here are probably less hot than yours : I never used gloves to cut chili peppers. I enjoy spicy food, but what is called "spicy" in France is not so spicy than in Spain or Africa, and your hot chili sauce would be considered as potentially dangerous in the area where I live now: I have to give it a try.

There are some not so hot chiles here that I use them as appetizers, by stuffing them with cheese, breading and frying them. I would not use gloves for those. But these kind wa much too hot, even for me. You have to be careful.

Wow! That's hot! I love to eat spicy foods and everytime we eat at some fastfood chains, I always ask for some fresh chili or chili paste/oil. I don't eat them, I just love spicing the food up. I think there's no chili of that kind here in my place. Anyways, I might try cooking your recipe using our kind of chili. Thanks for sharing!

In fact, I made up my chile sauce recipe after reading the ingredients of the jalapeño chiles of the can I had. I did not use them all, but it gave me ideas. I don´t see why my recipe would not be yummy with another kind of chii. I might even try it someday with normal sweet peppers (it just occurred to me).

great to make the best use of the available ingredients.it love hot sauces with many snacks,vinegar definitely gives a very nice taste.yep one needs to be very careful eye contact about after cutting chilies as it burns badly afterwards.

Right to everything you said, swapmind. I love to use the veggies I have at home to make special food. Now I have lots of oregano drying in the kitchen. I love to top green slads with oregano, parmesan cheese and croutons.

I could have done it not so hot, if I had another kind of chiles. Next year I will palnt chiles that aren´t so hot too. But I can soften it with more olive oil if I wish. It´s awfully tasty though.
