How do you make Masala Khichdi?

Masala Khichdi - A pressure cooker recipe made up of rice, lentils, vegetables, butter, and various seasonings. It is a pure Gujarati dish and enjoyed in homes almost everyday. It can be had with yogurt, curry, peanut oil [as garnishing] or even by itself.

It is fast to cook and very affordable, as it can be worked with as little or as many ingredients as you want to add and another benefit is that the leftover can be had as breakfast the next day, because it tastes good hot or cold.

Being a Gujarati, Khichdi is my favorite food. It is a combination of rice and it can be made with various lentils or even vegetables, by using nothing but water, salt and a pressure cooker. But my personal favorite is masala khichdi, which is a version of the normal khichdi, with added vegetables and seasoning. I personally like to use garlic, tomatoes, green chillies, potatoes [sometimes] and onion in my masala Khichdi. Add a spoonful of ghee [clarified butter], and maybe a spoonful of yoghurt and you have something very delicious for your dinner. If there are leftovers, you can store it in the fridge and eat it the next day for breakfast with a little peanut oil [or any oil that you have]. But I know people have different ways of cooking this in their homes. Some people do not use a pressure cooker, but use a deep pan and cook it on a low flame, for the better part of one day. Have you had khichdi of any kind? How did you like it? How do you cook it at your home?

I have never even heard of this dish, then again, I had to look up to see what a Gujarati was as well. Having said that, I do like rice, but I can't handle heat (peppers) so I'm pretty sure your way wouldn't cross my lips. I wonder what your folks did before the New World was discovered... since tomatoes, chilies and potatoes are New World foods.
