Biryani is a very testy and spicy food in all over India. Not only India but in the whole subcontinent, people like this food.Biryani is made up of rice and meat is mixed with it.Many kinds of "Biryani" is there like mutton Biryani,Chicken Biryani,Beef Biryani etc. Some spices are used with Biryani and it is bit oily.I am missing Biryani these days cause these days it is very difficult to find Biryani in Taiwan.People should taste this food wherever he is!

Biryani originated in Persia and was introduced to India by Persian merchants and, of course, by the Mughal empire. It has since become part of Indian cuisine and has many variations in different regions. The essential difference between a biryani and a pulao is that, whereas in a pulao all the ingredients are cooked together, in a biryani the rice and the meat and sauce are cooked separately and layered together before serving. It is not a difficult dish to make but it requires care and is not a quick dish to make, when made properly. I have made a biryani only once (using lamb as the meat - we cannot get mutton easily in England). It did, indeed, take a long time to make (according to the recipe, which was as authentic a version of the dish as I could find) but was very much appreciated by my guests. My recipe contained no chili or tomato (since both of these were unknown to the Mughals) but was beautifully fragrant and quite delicious. The contrast between the 'dark' flavours of the marinated lamb and the 'light' and subtle flavours of the rice were well combined, making each mouthful slightly different in taste. It was certainly far superior to the biryanis which are served by most 'Indian' restaurants here - most are actually run by Pakistanis and Bangladeshis, so I have to put 'Indian' in quotes, though most of them serve dishes from all over India.

I love Biryani and even enjoy all the many varieties of it. There are so many places here where I can have them. And even if I want to make them myself at home, I can easily find the basmati rice and other ingredients or spices. I can also find the ready-to-use spices for not-so-skilled cook like myself. It may not taste as authentic as home-made ones, but it will still be good enough for me...
