Too many onions

Someone in the family bought too many onions for the fourth, and so I guess I'm going to start dicing them, slicing them, and using some as onion rings. I'll have some in eggs, and some just carmelized on top of chips. I know if I don't eat them, no one else will and I don't want to see it go to waste like everything else does. Anyone else had too much of just one thing left over after a holiday?

You could find a means of preserving them through drying or jarring them. Otherwise, maybe give some away to your neighbors.

It is not really leftovers, but I am throwing every week some veggies. I have joined a group of customers and I get every week a full basket of organic veggies for a cheap price. I don't choose the content of the basket, and I don't like everything : yesterday I threw courgettes to the garbage...

You threw courgettes to the garbage???? What is not to like about courgettes? (People in America won't know that we are referring to 'zuccinis', so I had better mention that name!)

topffer try zuccinis fried lightly as they are delicious specially with some cooked onion really good. I love a good ratatouille wow. wish they would serve it here. one thing they do well are home made veggie soups.zuccinis in ratatouille with eggplant and tomatoes?sounds so good.

In fact I did not knew what to do with 3 courgettes : I had not enough for a gratin, and there was no red pepper in the basket for a ratatouille.

desserts are usually always left over which seems like the opposite right? My family isn't big on eating a lot of desserts but a lot of people still seem to make lots of options for desserts for parties!

My entire family has a tendency to make too much of everything. I think most recently it has been potato salad. I am like you, I hate waste. You can even chop the onions and freeze them in little portions to add to stuff. They are very healthy.

That is so messed up. I would have been reaching for a bottle of mustard and some pickles or relish. Dill or sweet I would not care.

hi GardenGerty have you ever heard of someone messing up potato salad? well the cooks here did,no celery, no hard cooked eggs, no pickles or relish, just a bland mayonaise and cubed potatoes.it just simply had no flavor at all. same with the pasta salad.nothing was added to the mayo not even pepper and salt. the egg salad had chopped ham and celery and actually was fairly good but the other two were awful.now usually they make a great potato salad but I guess that cook was off that d ay.lol.

In our family it's usually the spaghetti and deserts that get left over after the holidays, but we don't let it go to waste because we just chow on them the following day and share them to friends as well.

Cool idea. We sometimes put left over spaghetti sauce on bread and toast it with cheese and it turns out as home made bread pizza.

So many root veggies are powerhouses of nutrition. I always tell people onions are good for them. I have a summer cold and I think I will eat extra onions today to help it out. I have heard of boiling onion and sweetening it with honey for cough syrup.

We get Walla Walla sweet yellow onions here and I love to cook them in olive oil and some asparagus until they are tender. So good.

If you want to chop lots of onions in one session, you can freeze them very successfully. Put them up in baggies of about a cup each. Then you can use them in cooking as you need them straight from the freezer.

Hello cowgril. My family always cooks too much and often it sticks around and end up being thrown away because they won't eat it even when re purposed. I try to eat it but then after a while enough is enough. I have taken onions and sliced then nice and thin then cook then until they are nicely caramelized. They are then ready to add to scrambled egg sandwiches or on top of hamburgers or any thing else calling for caramelized onions. Some times I like to just them in a sandwich by themselves.

Well, sort of, potato salad. I remember one party where I made a ton of potato salad because everyone loves mine. There were a couple of other people who also made potato salad so there was a lot left over. But, I can never call leftover potato salad "too much" because I adore it. I can polish off a large bowl of potato salad in a couple of days all by myself. I know that's not the healthiest thing in the world to eat a lot of but I don't make it often. As for onions, I also wouldn't have a problem with too many of them. I love onions. They can be used in just about anything and prepared in so many different ways. There's a song that came out a long time ago (1966) by Susan Christie called "I Love Onions". A cute, silly song but oh, so appropriate for me. Here's a link to it on Youtube: http://www.youtube.com/watch?v=KM-lEhhsLQw (NOT a referral link!) Good luck in finding enough creative ways to use your onions!

That is the thing about holidays, there is almost always too much stuff leftover. You could try making a big batch of soup, and you might even dehydrate some for use in soups later on.

hi, in cooking of course we should always measure how many onions we should use in a dish, but having many onions in a dish will give more delicious taste,so here inn the house there is no wasted onions, and aside from that we love a dish with many minced onions.

hiSomeCowgirl oh yes Turkey dark meat I really really dislike the dark meat and it has more fat and cholesterol in it. so finally after my small family ate all they co uld somach,I took the cooked meat to a local sou p kitchen and they were delighted to have it as it was fresh and thoroughly cooked. a lot of men love the dark meat of turkeys and chickens and they are welcome to it.Now I am a widow living in a retirement center and ugh dark meat of turkey they seem stuck on the crap.so I just eat the rest and let it go.Onions can be so good in so ma ny many things so surely the family would like some of them?
