I love to prepare fish kilawin

Fish kilawin is one of my favorite foods. This serves as my appetizer when eating. I cook this during weekend. The main ingredients of fish kilawin are vinegar and ginger, meaning you will cook the fresh fish out of vinegar. This is so yummy especially if the fish is yellow fin. Ginger when sliced very little and pour it on fish will give a very tasty kilawin.

I am not really a huge fun of raw fish, but there's this one recipe, I can't remember its name but it's probably a specialty of Ilocos or Pampanga, pretty much the same as your kilawin but there's mayonnaise on it. I didn't even realized it's raw! It was so good.

I think what you are talking about is fish sisig, that recipe really includes mayonnaise.

Hi raine, fish is so sensitive when it comes to acid..i think thats the reason why it is not raw at the time you eat..

I love fish very much but I had never heard of fish kilawin. I will certainly check it at Internet as I´m alway trying new recipes. In my country we cook fish in lemon juice (it´s called cebiche) or we make a cooked or fried fish that includes vinegar at some point (escabeche). Both are wonderful, but they dont have ginger. I will have to try the kilawin.

Love it! especially when prepared with fresh fish, vinegar derived from coconut (tuba), and most especially mixed with fresh coconut milk and green mango paired with seaweed, its the best meal for picnics! nom nom

hi jade,
there is only me and my mom in the family who cannot eat kinilaw because it is raw. i mean it didnt touch the stove or the fire.. that to me is raw.
but i love the smell of kinilaw. i guess it is due to the ginger and other things you put on it. but i try the salad .. all the ingredients there cucumber, spring onions, ginger, salt, vinegar, except the fish. tastes good still.

Kilawin is similar to the sushi of Japan. The only difference is that sushi is eaten with wasabi alone. While kilawin is served with vinegar and ginger. Adding coconut milk and lemon could enhance its already delicious flavor.
I know this dish is delicious but I don't take it as habit to indulge in it frequently since there is a chance that you could get parasitic infection from it because vinegar alone won't kill any possible pathogen could possibly live on the tissues of the fish. Call me a killjoy but the possible health risk involve should also be taken into consideration.

I love it when it is tanigue that is prepared for kilawin... Sometimes its best when there is coconut milk... Yum yum yum!!!!

i love to eat fish kilawing ,really realy , but the sad thing is i don't know how to prepare fish kilawin.. i am only good in pastries but not preparing kilawin
