Cookie tips

Hi. I cant, for the life of me, make cookies that are crunchy/crispy. They a;ll turn soft and cake-like. Any tips would be appreciated. Thanks! :)

that used to be my problem with homemade cookies also but after like 15min or when you see the batter puff up at the top of each cookies take the spatula and smash them into to discs ya know just kind of like when you make burger patties? :-) puffy= soft
flat=crisp
oh and having a more sugary batter can make them crispy :-)

honestly i try to wait until 2 minutes i would have taken them out since smahing them early could result in the moist batter getting stuck on the spatula and then the cookies bake up a little less nice looking :-) so try to wait until the last minute, but try it in between as your cookie batter might be different or have more flour in it?

Go to melindalee.com and there is a category there about baking cookies and what to add/substitute to alter the consistancy of cookie dough. I like the softer cookies so she says to add 1/4 cup flour, whatever the recipe calls for in sugar..use half white and half brown or all brown. Those work for me.
I don't remember how to make the crispy...it is there tho. IT is a good cooking/baking site. She is on the talk radio out here in CA on am but I can't get any AM channels where I am at so I can't hear her anymore. But...check it out. I printed it out and have it in my main cookie cookbook so I always have it when I do cookies. THere is also substitution list... if the recipe calls for this and you dont' have it.. you can use that! Cool site.

If you leave them in the oven a little bit longer they will probably be crisp after they cool.
Oh...and...keep in mind that, soft cookies are yummy, too!
