I've been wanting to try this kind of photography because I think it's way cooler than planking. But can I do it using a digital camera and not a DSLR camera?

Well if your digital camera has a manual mode on it, yes you can do a levitation shot. all you need to do is to adjust a aperture and the shutterspeed of the camera. There are some good digital point and shoot cameras that has a manual mode on it. some are, from the canon line-up and from panasonic lumix, but i doubt you can find a manual mode from a cheap digital camera such as from cd-r king.

you can as long as you can open it at photoshop... all you need is two photographs to do it. the one with the subject that needs to be levitated (your subject is standing on a chair may be) then the other is without the subject, just the empty spot where your subject will stand. merge the photo together then your done. just make sure you take the photos in the same spot. without moving your camera.
