How can I get these plants to grown roots?

I have a few plants that I'm growing from left over bottoms - lettuce celery, green onion. The lettuce was doing great but a few of the plants have stopped growing. None of them have roots. I've tried hanging them over water and placing them in damp newspaper to encourage root growth.
What other tricks are there?

I know these things can be done. The funniest thing happened when I was keeping celery bottoms in a little bowl of water in the fridge to save it for art printing. Celery bottoms look like roses when you use them as a stamp. So, anyway, I went too the fridge for something and one of these celery bottoms had started to grow new celery! In the dark. In the fridge, In a little bowl of water. Amazing!

Well, I'm not a gardener and actually, I can't grow anything. But I thought I might try to grow some green onions and I came across this site www.gardenswag.com/2011/12/5-foods-you-can-grow-from-kitchen-scraps/ It might help. It sounds like you've got the makings of a good salad there. I love salads. Good luck with your growing.

Thanks I'll look over this site. I do have some green onions growing too. They are just happy in their jar in the water. The lettuce is being difficult and I can only get the centers of the celery to re-grow. We weather is really nice here too. Not sure what is going on.
My next project is actually ginger. A bulb we bought a few weeks ago is sprouting.
I would love to do potatoes, but I'm saving that for my son to do for a school project.
