A question for the vegetarians and vegans

About three weeks ago I decided to stop eat chicken and meat, it started befor that when I stopped eating eggs. after a week I also decided to stop eating fish too and reduce as much as possible with dairy products. I need recommendations from vegetarians and vegans about special and tasty foods beyond the usual things. thank you and have a good day.

I eat a lot of thai foods - like green curry tofu; chinese stir fry, huge salads (like this one http://www.vegetariantimes.com/recipe/mexicali-chop-with-crunchy-tortilla-strips/), enchaladas, burritos, fajitas, trail mix, vegetarian lasagna, chili, vegetarian pizza, ratatouille, pasts dishes, fruit salad, almond milk yogurt, ect.
I have learned you are better off finding foods that have been vegetarian/vegan since they were created than making non-vegetarian foods vegetarian (like making fake mac n cheese).
