What to do with leftover chicken?

I have 2 larger chicken breasts I cooked last nnight and ate a little piece. Now I have the leftovers and not sure what to do with it. I was thinking of ripping it up to making chicken salad. But mmight be a lot leftover ontop of that.

Your idea is a good one. I was also going to suggest shredding it and putting bbq sauce on it and serving it as a sandwich or shred it up and put taco seasoning on it and serve it as a chicken taco those are the only thing I can suggest.

Chicken soup sounds really good right now. Now you got me going I may just have to pick up some noodles and the rest of the items and make some this week. My family really likes soup of all kind.

I love soup especially on a chilly fall evening or winter. I put chicken broth, potatoes, zucchini, carrots, onion, corn, and peas in. Ill let it cook up then add the noodles later.

Chicken salad is good. If there's still some chicken left, you can make it into chicken spread. Just put mayonnaise, season with salt and pepper or you could add pickles or boiled egg.

That actually sounds pretty good. I made chicken soup with a load of veggies and will add pasta later, then the rest chicken salad sandwhich. But Ill save what you recommended as it sounds good.

Chop it up and put it with pasta and alfredo sauce and veggies of your choice. Make a homemade pizza on a tortilla with alfredo sauce, spinach and mushrooms and chicken. Freeze it for another day and hope your family leaves it alone. Make a fruited chicken salad with strawberries, grapes and other fruit and large chunks of chicken. Shred it add salsa and sour cream and eat it in a tortilla. I love chicken because of its versatility.

The pizza idea sounds good actually, I put half of it in the chicken noodle soup, then made a tiny sandwhich for lunch with bbq chicken and have a decent dish left.

I ended up looking a recipe off that site for a chicken noodle soup. Its very delicious having bowl right now.

The three things I use them for are already mentioned. I'm trying to think of something else now.... I have never never ever made one, but why not a chicken pot pie? I would like to make one. They're pretty easy if you know how to make simple pie crust, I suppose which I mess up every time haha.

Honestly, Im not a fan of chicken or beef pot pie for some reason (Im off I know). I threw tgether a chicken soup and will add the noddles later. I still have left but I was thinking of making a sandwhich.

Salad would be good if it were a big salad! Perhaps home made chicken noodle soup? Shredded chicken sandwiches or tacos, fajitas... though you'd have to eat a lot of fajitas to use the chicken up. Probably the salad or soup would be best.

I actually made chicken soup, its in the crockpot then Ill add the noodles later on.

Excellent, I hope it turned out great. My sister in law makes some great soups home made, I need to ask her the secrets because those soups she makes I have never tasted a match before.

when we have chicken left over i make chicken parmesan and have it with pasta. its a good way to use chicken up. we go to a butchers and get chicken cheaper than they have it in the grocery stores. its really good and my family likes it.

I see you ended up making a chicken noodle soup; soup is always a good way to use up leftovers. Chicken tacos would have been a good quick and easy way to use up the leftovers. Or you could have incorporated the chicken and some veggies into mac 'n' cheese--either homemade or a good boxed variety (I have one particular organic brand that I really like, even though I'm generally a "fresh and local" kind of girl). Chicken chili would have been another good option, especially if the weather has started turning a tad chilly there as it seems to be doing here. With a chicken chili, I would lean more toward using white beans rather than my usual red kidney beans.

Hi 911 My suggestion would be to make some chicken pot pies. You can buy the puff pastry in the freezer section of your market. All you have to do is make a simple white sauce, add carrots, peas, or whatever veggies you like and have on hand. If you need a recipe, I would be happy to give you mine but would have to send it to you as a message due to mylot restrictions about recipes. Just let me know if you want it. Good luck..

We cook up a whole chicken - eat up some pieces on one night - and then we get the leftovers. Some go in a salad - either chicken pieces on a green salad, or a chicken caesar salad, or chicken pieces with simple greens, mango slices and avocado with French dressing (one of our favorites from a restaurant that we "copied"). Some might go in a soup with veggies - and either beans or pasta (whatever we happen to have). Some might go in a stir fry with vegetables . . . or in chicken fried rice.

That is a nice way to make the leftover chicken. Making chicken burgers is also another option.

Hi turn it in to chicken parmsion and make some spagtie to go with it then you can have other nice dinner.
