Carrots are one of the most nutritious vegetables and should be a part of the healthy diet. These deep orange edible roots are a great source of beta carotene.Besides carrots are excellent source of vitamin A,vitamin C,vitamin K,Dietary fiber and potassium.

I don't like carrots sometimes, specially when they are sauteed with other vegetables. Though i know how nutritious they are, sometimes i don't eat them when in a mixed veggie food.
But i like carrot cake and carrot juice very much.

Looks like you are a good nutritionist. Clap you. I would like to add with that these vitamin a, c are good antioxidant that help detoxify our liver, sweeps away all free radicals and burns our fat and thus makes us more young and energetic.
We can enjoy many recipies of carrots and so far as we can do we must eat it raw.

Hi!
I am not also fond of carrots but I can tolerate eating it. I know the importance of Vit A in my diet c since I'm suffering from Astigmatism. I wear eyeglasses to correct my eyesight. Today, I cooked a dish and I included carrots on it. :D

They are also very tasty, there are a lot of foods that are good for you, that have a lot of nutrition and are very beneficial, but are not at all tasty. I for one really like carrots, cooked or raw. I have only ever had orange carrots though. So I don't know if the other types of carrots have a similar flavour or nutrition. Is the fact that your skin changes colour real or an urban legend when eating a lot of carrots?

I like carrot not 100%. but 60%. I cannot classify my liking for it similar to bittter gourd. i will rate that 20% only.
carrot is rich in vitamins. We use it as salad and also for making curries. normally it is associated with good eye sight. yes. people who have less eye sight may be taking less of carrots.

There are plenty of people who can not digest carrots at all. Vit A en D you get from the sun also just by being outside every day for 30 min. Fibers you find in all kind of fruit/vegetables and bread/cereals as well. Vit C you find in fruit and vegetables also. So if you are not able to digest carrots or like them or they only give you a stomach ache or keep you farthing it's better to skip them from your menu. BTW it won't give you great eye sight either.

I like carrots, but only as an ingredient for salad and vegetable / soup. I do not like carrot juice, I do not know why but it feels a little weird to me.
