Eating Tomatoes

I planted tomatoes and have been picking lots of tomatoes, so my counter is covered with them. Each day I eat a couple of them and now am looking for ideas to serve them faster or maybe will can them. Any ideas appreciated, as right now I might juice, stewed tomatoes, make sauce, or soup with 20 of them tonight.
We don't want them to go bad and my husband said there is no way we can eat all of them fast. Several are very ripe.

Do you have any friends who grow food? Maybe you can swap tomatoes for something that they grow. After all, how many tomatoes can you eat before you can't stand the sight of them any more?

I tried to do a swap on Craig's List without any success. Most people only want to swap produce with people in their city, which I understand with the high cost of gas in this area. Thanks for posting.

Well, that's understandable, but I meant doing a swap with people you know. Are there any local garden clubs or small farmer's markets where you are?

It's always good to have them for smoothies.I saw a demo of smoothie making at Whole Foods and you can put just about ANYTHING in them!Even inm ice cream!and they're really good!You don't get that "salt-bombed" or "sugar-overload" feeling as when you eat a lot of junk food.

tomatoes we sowing the domain and then pick them harvest is great but we put them in jars for the winter.
grind them as some others just cut them and put salt and then boil outbreak like this.
winter so no need to buy tomatoes and we have winter supplies.
if you have a lot or sell, or another solution is to put them on winter supplies.

Have a great day and I have been putting them in the freezer to be ready for the winter. Also gave some away to friends and next year plan to start drying tomatoes and may even do some canning. I need to buy equipment, so will see how much it costs. Thanks for posting.

hi there... you can fried a fish then stir fried it with lots of tomatoes. instead using a tomato sauce for that, you can use fresh tomatoes in your garden. very nutritious and delicious. slice the tomatoes into a very small cubes along with other spices like: garlic and ring onions. you can put a little bit of water or let the juices of the tomatoes as the only liquid in there... you can add an egg if you want to have a better taste on that.
if still that plenty of it, you can sell it or yet share it to your neighborhood. for sure, they will be delighted with this idea.

Thanks for the reply. My husband would like this for dinner tomorrow and sounds like a good plan. I did think of my neighbors and may visit them this weekend with tomatoes.

You can make an Italian pasta with it, just add a small amount of cooking oil into a pan, add copped garlic til its golden brown, add onions and your tomatoes (a lot of them, add canned tuna or any meat leftovers then add the pasta, mix well, add some salt, pepper,olive oil and done. You opt garnish it with some leeks or any herbs that suits your taste and smell. This is what I usually do with my tomatoes.

we also planted tomatoes this year and we seem to have a lot. must have been a banner year for them. yesterday, i made salsa out of the tomatoes, onions and peppers. then i put it in the freezer. i still may add to it as the tomatoes keep coming or i may make another batch. i will either use the salsa for actual salsa or use it for a base for chili which i make a lot of in the winter.

I should make chili, as its great for the winter. I'm still surprised that there are so many as this year its a higher number, then past years for me. Of course, I did move to a warmer climate, so that might be the reason for the huge crop. Sure wish my corn crop had been better. Thanks for posting.

Tomatoes is very rich in vitamin C. You are so blessed to have that lots of tomatoes then. Yes you can always juice those tomatoes. That would be really healthy for you and your family. You can also make them into fresh tomato sauce which taste great in spaghetti. I also love chicken cooked in tomatoes. It tastes really great. Now for the excess tomatoes you may share some to your neighbors. I wish I were one of your neighbors!

Hello, Fishmomma. A favourite in Spain is tomato paste, which is spread on toast or for breakfast, served with meat and burgers, used on sandwiches instead of butter with cheese, salad or tuna, or just enjoyed with bread before a meal.
Grate tomatoes using a grater with an integrated bowl. Don't worry about grating your fingers, as the tomato skin will peel away as you grate to form a protective barrier. Now add ground black pepper and a drizzle of olive oil, stir and serve. If you'd like it thicker, add a little tomato puree.
I make a big batch and keep it in the fridge for a week to ten days. If you want to make a sauce for pasta, add garlic and herbs, or you can add it to home made soups and casseroles for thickening and flavouring. It's a good way to use up the very ripe tomatoes, and you can keep the firmer ones for slicing.

I envy you my friend for having vegetable plants in your own place.
I eat sliced tomatoes, with slices of onions and crushed chillies as a dipping for my fried fish and specially fried dried fish.
I also would use lots of crushed tomatoes in my sauteed recipes.
Though my friend, i don't like tomato juice.

My husband doesn't like tomato juice either. I can't believe the number of tomatoes these two plants are producing a day. Today I picked 10 more tomatoes good thing I didn't purchase another like my husband had suggested. I think he is amazed. Thanks for posting.

Tomatoes are just so nice to eat and good for our health. I usually make it into juice and sometimes with sugar eating. I suppose that's delicious and good to eat. It's a pity that i can not think about other ways to eat for you, so i'm glad to hear what other people say here.

I'm really glad people are posting ideas, as if I keep picking 5 plus a day my entire street will be able to have a huge potluck of tomato products for lunch. I'm thinking of making jam tonight and giving the jars as Christmas gifts. Thanks for posting.

In my area, I would have to pay for a permit to sell tomatoes to my neighbors and its unlikely it would be approved. There is a farmers market just down the street from my home. Thanks for posting.

I always try to can enough sauce to last a year. Home canned tomato sauce from home grown tomatoes is so much better than commercial sauce! I just trim the tomatoes and put them in the blender, skins and all, then freeze the puree until the weather is cold and the heat from cooking it down is welcome.
Canned tomato soup is nice to have on hand, too.
I sometimes cook tomatoes with zucchini and onions for a side dish. Breaded tomatoes are good, too.

I am going to make sauce from some of them, as this winter we will certainly be eating spaghetti and pizza. Never thought of breaded tomatoes sounds like it would be an interesting change for meals. Thanks for posting.

The problem with fruit and vegetables is that it all seems to come at the same time and then it stops and I have to wait until next year. I normally freeze the excess tomatoes, whole, and in winter, instead of using tomato paste I take out however many tomatoes I need put them under a little hot water remove the skin and prepare them when they are still half frozen. They taste fine and by keeping the skin on they don't get freezer burn as quickly. If you don't want to or can't freeze them, you could always make jam, it uses quite a bit of tomato it is a way of using them without letting them go to waste.

Never thought of jam and it sounds like a great way to use some of these tomatoes. I wish tomatoes had a year round growing season, but it will get to cold unless I buy a greenhouse to keep them warm in the early hours. Thanks for posting.

Hi there. Our family makes bottled tomato sauce
Every year. This is an Italian tradition where we
Make one year supply of tomato sauce. We bottle
100 kilos, more or less, every year.
Whenever I have lots of tomatoes at home I cook
them, put in containers. Put them in the fridge or
freeze them.
Here is my own recipe. Put olive oil in a pot.
Sauté garlic. Do not brown. Put in chopped tomatoes.
Stir. Boil. Simmer for half to one hour in a very low
heat. Season with salt. Put in lot of basil leaves.
Put them in containers and refrigerate or freeze.
Every time you need pasta sauce, just get one container
and put it in blender. You can use the same in cooking
Other dishes that require tomato sauce or puree.

I don`t like to can food, but I freeze sauces ans peeled tomatoes. Maybe you could dry some, if you have so much. I have never done it, but I`m sure you can check it at the web.

Never thought of drying them might give it a try next year. I have taken the peels off some of them and plan to freeze them. Next on to the sauce, as this will mean no bought sauce for quite awhile. Also will give some to friends. Thanks for posting.
