Does anyone know a good recipe for sweet potatoes? Other than just boiling them?

My boyfriend and I had a phase were we ate a lot of sweet potatoes but we have kind of been neglecting them lately and we still have about five of them left and I was wondering i anyone new anything a little more interesting to do with them? They are about to go off in the next few days I fear so need to do something quick with them. I am trying to use up everything in the fridge also before buying any new food as I have to save up for the remainder of my Christmas shopping and a holiday and I only work part time. In my fridge there are also onions, peppers the bell and chilli kind, maybe 3 types of cheese Stilton,cheddar and Parmesan, a bout a quarter of a butternut squash, garlic and an array of dried spices and herbs. Maybe have mince beef too and frozen peas and beans in the freezer too if anyone has any ideas for these ingredients. Any ideas would be really helpful.

Hello chao and welcome to myLot. I like to bake my sweet potatoes because for me they are hard to peel. I roast them then skin them mash them with salt pepper and butter. I also like to make french fries with them as well as hash brown sweet potatoes. Then there is sweet potato pancakes. I have taken a vegetable peeler ans sliced them very thin and deep fried them making sweet potato chips instead of whit potato chips.

I have read about sweet potato salad like regular potato salad. Not sure if it is any good but you look like you have the ingredients for a good salad.

Thanks for your comment those look like really good ideas, wood maybe like to try the making sweet potato pancakes they sound pretty good. Sweet potato chips sound good too.

I use sweet potatoes instead of potatoes in casseroles and stews. They meld wonderfully with other juicy ingredients. I also place there coarselly cut zuchinni and eggplant.

Thanks for the comment I will have to think about that I think the boyfriend detests zuchinni, eggplant and cucumbers or anything else of that consistency unfortunately and I don't have any of those in the fridge at the moment anyway, am trying to work with what I have with ought buying new ingredients.

Sweet potatoes make a great curry with lentils and cauliflower. You could also use them in a soup, or bake them and fill them with tuna and coleslaw. That makes a great flavour combination, and it's healthy as well.

Oh! We actually have dried red lentils in the house so that one could work pretty well thanks.

I love sweet potatoes when they're boiled but here in our country they slice it up into roundish slices and deep fry them, then lace them with sugar which will turn into syrup to cover the sweet potato. It is also so yummy if cooked this way.
