No matter what dish I am cooking I add a touch or two of my own. A little spice, a hint of herbs. Usually I do this by smell, I smell and then I add just a little of this or that to make it more interesting. Do you do this? Do you have favorettes? Curry is one of mine.

I'll do that, too, although I've never used curry. I like to add tarragon to chicken dishes and fish as well as some casseroles. Burgundy is great when you're cooking roasts, chops or making hamburgers. I'll add thyme and rosemary to a lot of things, too. It all depends on my mood and what smells good and yes, like you, I usually use my nose to tell how something will taste and how much is enough!
My mom and grandma did this and I used to watch them. A pinch, a dash, a smidgen were their units of measurement!

Suzieqmom, I love the measuring method because I hate washing those little tiny spoons! I have added Burgundy to spaghetti sauce and you know how they say it's always better when it sits in the fridge for a couple days? The Burgundy flavor really comes out after 24 hours.
I am going to try, eventually, a dish I saw in TV--Hellman's Parmesan Crusted Chicken. Of course I'll use no-fat mayo but I can see where I can jazz it up a bit with my favorite herbs and spices. A recipe is rarely adhered to in my kitchen.
I never though about Burgundy in a marinade so thanks for that!!

I like to do that too. I don't think I've ever followed a recipe exactly. One of the things I like to add to things is fresh ginger. You'd be surprised how many things you can add this to. Recently added it to beef barley soup and it added a little pizzaz.

We add garlic to almost everything. I like dill in many things and we use cumin and turmeric and ginger. We use seasoning not just for its flavorful effect but because they have so many health benefits as well. I know my favorites and then there are others we use from time to time as well.

I do love to add spices to my food, too. I do it by knowledge of the flavoring of the foods and of the spices more than by anything else; I know from years of experience many things that pair well, and I am the adventurous sort who likes to test out new combinations.

a lot of dishes here use garlic, onion and tomato. my mother started using ginger instead of tomato for several years now and it works.
