Funky ingredients to add to Mac and Cheese/KD

Hey All, So I've heard of the original 'mac n cheese' and hot dogs. But does anyone add other ingredients to they're mac n cheese? I thought of mustard thinking it would add a tang to it but I'm to nervous to try. Any suggestions or ideas?

I usually add a teaspoon of mustard powder to the flour when making the roux (and before adding the milk). You can also add made mustard to the sauce with the grated cheese, so long as you stir it well. I also sometimes like to add a tablespoon of tomato ketchup (which makes the sauce pink) and garnish the top with sliced tomatoes before putting in the oven or under the grill/broiler.

Well my mac n cheese has mustard in it to begin with so don't be shy on that account. My mother in law is the queen of mac and cheese add ins. Living on a military salary with three bottomless pit sons made her try many things. We have a few we use of her recipes. My husbands favorite two are one with ham, onions and green bell peppers the other has browned chopped beef, onions and frozen peas added in. No my Mom and myself add browned chicken chunks and broccoli. I have experimented myself and always add a pound of finely chopped cauliflower no one knows it's there and it gets veggies in well my kids aren't that bad with veggies it's hubby who is the tough one. My MIL though also adds those little smokies as well as : crumbled sausage and a can of Italian diced tomatoes, (my version of that one is chorizo and a can of diced tomatoes and chilies) chicken, mushrooms and almonds and my favorite she switches out the cheddar cheese for Swiss and puts in ham and chicken like a chicken cordon bleu! Sorry I am on a diet and this got me craving ooey gooey mac n cheese

I don't normally do too much to mac and cheese. I will sometimes add hot dogs. Sometimes tuna will be added. Once I think I added broccoli. Other than that I am pretty boring when it comes to mac and cheese.

I have also tried adding some bacon strips to my mac and cheese, just like what the friend of Archie0 did. I love it so much, too. I think they go perfectly together.

I like bacon in mine. In the grocery store where I shop I've seen frozen mac 'n cheese that has vegetables added to it. It has broccoli, peas, red peppers and carrots. The mustard might be good. I've seen it made with chicken and broccoli, too. I knew somebody who added kielbasa to theirs. And I almost forgot - the company that makes the frozen mac 'n cheese with vegetables also makes mac 'n cheese with lobster. I don't think I'd like that at all. Have fun! You gotten a lot of ideas from your discussion. Now I'm hungry for mac 'n cheese.

Here in mexico we also dice ham and put it in mac and cheese, its good that way as well...

Good you did not try that combination. Because i don't think it would really taste that good. I remember one of my friend who eats meat, she use to eat here Mac n Cheese with crispy bacon strips and she claims that they taste just out of the world. I am not sure about bacon, because i don't eat anything else than chicken. Once i tried adding some Pringles to my Mac n Cheese. I loved to eat them with my chips like salsa

For years, I have been adding a small can of tomato sauce and some onion salt to my mac and cheese...gives it some zest, and my family loves it.
