What is the reason for deep violet color for beetroot inside?....

Last night i brought beetroot (it can be called as table beet or garden beet or red beet....and so on some where ) to cook to eat. All the pieces are of purely violet colored inside. Few of them are chewed by my child as she likes to eat every time i bring them into house. My child made a question of their coloring inside why... There was no answer at me to convince her. All the deeply i thought and not found ant reason for it. I have some more doubts about this vegetable one. What are the main uses of eating beetroot frequently?... What are the medical benefits that are come from it?... If anybody knows about the reason for it's deep violet color inside,then please let me have the clear cut about the thing instantly to answer my child now. Shall i take it in the form of raw state instead of boiling it?...

It is better to avoid intake of all root vegetables including beetroot in raw state. Many kinds of worms and fungi are present on these items since these are grown under soil. So, bring awareness to use these vegetable items after boiling.

I just don't get the idea why ? but when I was on my secondary schooling I stumble into one of my assignment regarding colors. Violet colors is the favorite color of homosexual person I don't give extra effort to study more but on my observation it seems that what has been written and read before was true.

You can do both, eat it raw (which doesn't taste very good) or boil it, that will soften it up and you can even add some flavor to it. The color inside is the mineral or vitamin that it produces. Many people believe that eating the root is where most of the nutrients are, they are right and wrong. You first need to harvest the beetroot so that it can be consumed without making you sick. Just peel it and boil it, enjoy.

The color of beetroot is due to a pigment called betanin or betacyanin -- http://en.wikipedia.org/wiki/Betanin --. The color of betanin varies according to the pH from red blue to red violet. This pigment is often used as a natural food dye.

It gives better stamina, improved blood flood and good for low blood pressure. Its red colour because it contains betalain pigments means so many colours added like yellow, orange etc... in it.
