I need easy Irish recipes

This is NOT Irish, but it definitely IS green - and delicious. Buy a regular sized container of whipped topping, a pint of crushed pineapple, a box of lime jello and a pint of small curd (and dry) cottage cheese. Drain off the extra liquid from the pineapple and the cottage cheese and mix them with the whipped topping. Then, stir in the lime jello POWDER until it has mixed into everything. You will have a thick green and really tasty fruit salad. Don't like cottage cheese? Don't worry about it. It will surprise you!! I don't like cottage cheese, but I just love this stuff! I will also change it up with different fruits and jellos so the look and flavor changes (like orange jello and mandarin oranges), but since this is for St. Patrick's Day, the original green version is perfect. Just tell people it's Jello Salad, but if they are lactose intolerant, warn them.
I have also seen recipes for Irish Cream brownies online, but that might be a little pricy to do. Another is to do a refrigerator cake using chocolate wafers and whipped topping, but buy mint flavored wafers instead. Decorate the top with sprinkled shamrocks. You would make the wafers with this recipe (http://smittenkitchen.com/blog/2009/03/homemade-chocolate-wafers-icebox-cupcakes/)and adding just enough mint flavoring to compete nicely with Girl Scout Thin Mints. I'd suggest Girl Scout Cookies, but they're iced and the whipped topping needs to slowly soak into these cookies to make the entire thing come together and be one in harmony with all things wonderful. The other thing about this link is that it shows you how to make individual cakes instead of one big cake, which will save you from the awkward cutting phase of the project. I grew up on these cakes and I can assure you that they are spectacular!! The wafer cookies can be found, usually, in the freezer section near the ice creams. You can also make your own whipped cream and just add the mint flavoring to that while leaving the cookies plain chocolate goodness.

Traditional irish dishes are bacon and cabbage, collcannon made with potatoes cabbage and parsnips, bread and butter pudding, irish soda bread, fruit scones to name just a few :)
