Making and smoking your own bacon!

My roommate recently bought a pork belly from a local supplier and has gone through all the steps to ready it for smoking --today's the day! Half of the batch will be maple syrup bacon, half will be pepper bacon. Have you ever made your own bacon? Or perhaps you'd like to weigh in on your favorite flavor!
