New Recipe, nervous to make pastry. Eclairs! which dessert would you choose?

For Easter, my mother and I always bring the desserts. This time we arent going to do cheesecake as good as it is. Mom is going to make my grandmothers famous (really) carrot cake. It was in a canadian heritage cookbook, maybe not THE canadian heritage cookbook.. we are looking for it! Anyway, she is also going to make a dozen cupcakes for the small kids. And I took to Martha Stewarts website to find a yummy easter treat. She has a list of easter desserts as if she knew I was coming! I chose "Mini Eclairs with Strawberries and Cream" This is listed as "relatively easy" though I'm worried about making the puffs because I havent done any sort of pastry before. Then I am also worried that the cream will melt and look awful! I will make them the day of, but I haven't perfected the whipped cream yet. Hmm any thoughts on getting eclairs right? Out of the 3 desserts which would you choose?

The fun thing about cooking for kids is that they are easy to please. And you don't know how easy the recipe is until you give it a try. It sounds delicious.

i will try it out, perhaps i should think of a back up plan though. Maybe I will make the cupcakes if the eclairs go south :) kids will also get chocolates im sure for easter so theyll be happy!

My mother made the most incredible puffs when I was a child, but I only made it once and decided that I didn`t have the streght in my arms to beat the dough all that was needed. So puffs are one of the yummy things to eat that I eat when I go out. I`d choose the eclairs, but I wouldn`t try to make them.

i know i love eclairs! the recipe seems doable, i will try it and see. they will most likely just end up looking awful but taste fine lol!

Tell us how difficult it was and how they came out! My mom filled them with a sauce made with milk, egg yolks, sugar and corn flour. Real cream is awesome too and you can even cover them with chiocolate. YUM!!!
