Getting ready for having a diner at home.

This weekend is a long one as it is Holy Week. On Friday I invited one of my favorite nieces for diner. She is coming with her husband and newborn baby. Rodrigo has never been at my house so I want to make special food for them. I discovered some sweet pepper and mushrooms on sale so I`ll make some mushrooms and sweet pepper strips in olive oil for starters. I also have a hot sauce and my zuchinni chutney. I`ll have bread nearby. For the main dish I`m thinking of pasta. What do you think I should do for dessert? I think it should be light. Help!

Sounds really good how about a flan for dessert? Or maybe a cheesecake?

I feel a flan is too much after the pasta and the heavy appetizers. And I do not make cheesecake. Wjhen I eat it, I go to a good teahouse and buy it. The two times I made it, I ate it all at once and it is way too rich.

Finally I did not have to worry about dessert. THey brought some awesome arab pastries. I served them with coffee.

Some one in here suggested cut up fruit pieces I will say a fruit salad would be nice if the weather is still warm or poached pears served with custard if the weather is a bit chilli! what ever you do I'm sure will be fine...most of all enjoy the company! happy Easter to you and yours.

We still have sunny weather so I think that a fruit salad will be perfect. Besides, it is easy to make. I am going to make a lot of nice things for appetizers and the have a lot of peeling and cutting before actually boiling them in olive oil with garlic.

Well, unless it is a special occasion or a holiday,, we usually never do a big meal like this. But yours does sound good. You could do something light to go with that as in a custard or something.

The special occasion is that it is the fisrt time that my niece brings her husband. But I try to make a special occasion out of every time that I have friends at home. And although I live alone, I usually have visitors at least once a week.

I've always been a big fan of lemon meringue pie as a light dessert. I never feel stuffed after eating a piece of that. Once again, you've made me hungry after reading your description of the food you are preparing. I am growing sweet bell peppers so I'm tempted now to go out and buy some mushrooms. Are yours going to be raw or will you sauté them, bake them, or do anything else to them? I love making a light pasta salad. It's one thing that even my husband eats. He normally just wants red meat and hardly ever eats vegetables or fruits but he'll eat my pasta salad. I chop up a lot of different raw vegetables so the salad is probably half veggies and half pasta. I also use a mixture of white and whole wheat pasta. (I found that using 100% whole wheat pasta is so bland that it's just not worth it.) Okay, that does it. I'm going grocery shopping! Enjoy your time with your niece, her husband and the baby!

I deep fry mushrooms and peppers in sizzling hot olive oil. I first add a clove of garlic and when it`s brown I add the rest and salt. After they are cooked, I place them in jars and pour over them the garlic oil and more uncooked oil if needed. I love lemon meringue pies, but I don`t want to be too tired so I will not make a dessert. I made most of the appetizers today and have to make diner tomorrow.

Hi marguicha, you like to cook and feel pleasure to invite guests and make them happy with your favorite dishes. I like mushrooms and Chutney is favorite. We eat chutney like sauce. Perhaps chutney is originated from India.

I think that chutney comes from India. And I bet indian chutney is a lot better than what I do. I try as much as I can

I`ll cut some fresh fruit, but don`t want to be too tired after cooking. I like to be rested when guests come.

Why not just have fresh fruits instead? Cut tropical fruits into bite size pieces then pour in lemon with sugar then have it chilled.

That`s a wonderful idea. It is easy and it would be a good finale after the pasta. There are still a lot of fruits in season here and they are not that expensive. I can buy one of each and that would be enough.

I will have fruits for dessert. After a heavy meal, I feel fresh fruit will be the best choice. Thanks for your good wishes.
