As a writer your target is to reach highest level of earning. The writing profession in the online arena is highly competitive. So everyone likes to grab employers attention and want to have a good amount. While it's true that some niches pay a lot better than others, they're mostly professional subjects where you'd need some serious qualifications to stand out from the crowd: doctors, scientists, that sort of thing.
However, the converse is also true - and there you're right: some niches pay badly no matter how good you are (unless you happen to be famous). Anyone writing about affiliate marketing, making money online and that sort of thing is destined to earn lower pay unless they get a following or really know their subject.
I don't think the niche is as important as having a voice. If you express yourself well and, above all, can engage your reader, keep them interested and leave them feeling like they've benefited from spending time on the page, your earning potential is much higher.
Unfortunately, of course, the biggest problem is - as you mentioned - the competition. If you can't (or don't) market yourself, finding clients who will pay well takes up more time. Still, I've never really marketed my writing and still earn enough.
