When we say Bicol Region , one who have been there would think of a spicy food, particularly Bicol Express. Bicol Express, is a meat preparation, complete with slices of the spicy finger chilis. It is with coconut milk and variations are done to make it more exciting. One variation is to put lechon meat or a fried pork meat made so crispy. Pineapple chunks are also added to compliment the spiciness. Last night, i was surprised by how it was given a new twist. It was with ripe mango slices ! It was so delicious specially that the meat was fried and with crispy skin. Oh my, we forgot that we are trying to avoid cholesterol! I will post another one for its recipe on how to cook it.

I only tasted the common one, but I would like to try the ones with the pineapple and and the ripe mango, it sounds so new to me. =) I like it totally spicy, like I'll get 1 glass of sweat eating it. haha! Thanks for sharing anyways. =)

Yes, try the one with pineapple or ripe mango. It has a new delicious taste. The spiciness of Bicol Express will indeed make you sweat.

My parents are from Bicol region and this dish, I can say, is a staple dish in our home... My sister also tried bicol express with pineapple chunks and to my surprise it was really delicious! :)

It goes to say that you are Bicolano too, so that explains why it's staple in your house. Indeed, putting pineapple chunks makes it more delicious.

Oh so that is how you make it, frying the meat before cooking it in coconut cream plus the chillies, and i was surprised by that mango and pineapple chunks variation, I must try that too ha ha ha. I can't cook spicy foods here in my house, my mother can't eat spicy foods. Oh well,I must make a non-spicy bicol express for my mother then. Hmmn.

Actually, you can reserve something not spicy yet for your mom when you are cooking a Bicol Express. Cook the final extracted coconut milk then get some to be reserved for your mother. Then, put the sliced chilis and continue cooking it until it's done the way you want it to.

If you are fond of cooking foods in coconut milk, then you must have a Bicolano trait in you. Bicolanos loves cooking foods in coconut milk. Our version of Bopis, has coconut milk and it's really delicious.

Oh yeah SIMPLYD , why have i not think of that? I must tell you, I love to cook those dishes with coconut milk in them, it is like you are eating a nut and milk at the same time ha ha ha. I think I would cook a mild version for my mother and a really spicy part for me, that's cool.

Yeah that sounds different from me. I am from Bicol and I have not seen nor tasted Bicol Express with Mango slices. I guess you are right about the cholesterol though the food is very high because of the coconut milk together with the pork and at times seafoods in it.

Yes, it's actually a viand that is filled with cholesterol. Specially that the meat used here is with the fat part. Putting slices of mango tamed the spiciness of the dish and adds some sweetness.

Oh.. Something that I don't really enjoy - Spicy food! hehee.. But I was able to try really and I think it's necessary for it to be that hot, else it would really be boring. heheh.. Not really fond of spicy stuff, but I guess it's okay if I'm tired ~ surely would wake me up! hehehee.. I haven't tried it with mangoes though, I don't really like fruit mixed with my food (except when it's dessert). Do post the recipe, would like to try it. Have a great mylot experience ahead!

Simply can't deny the fact its one of the best Filipino spicy dish. I am one of its addict when it comes to eating it. I don't know how to prepare it but everything I visit Luzon. I always find a way to eat this delicious dish by the Bicolanos. Even company ingredient makers, has now a quick easy way to cook this dish.

Actually there are already ready to eat bottled Bicol Express. But they don't taste as good as those that are being cooked in Bicol, where you can taste the creaminess of the real coconut milk.

wow when i read your post about bicol express i started to drool and crave for it i love bicol express it is one of my favorite dish not only because i have a bicolana blood since my mother is from bicol but the taste is so good that i can eat a lot of rice just because of the spicy bicol express.. i havent tried anything with variations but i would love to taste it maybe if i have the time to cook i will try adding some pineapple chunks to make it more tastier and healthy..

That explains why you love this dish also, because you have a Bicolana blood. Putting pineapple chunks or ripe mango slices really put a new twist to the Bicol Express. To me, it's more delicious if you have them in the recipe.

I like the Bicol express and other Bicol foods, but I can't take too much spicy and its toooo hot (huhuhu) I wish you can cook less spicy and less chili for me my dear

Actually i can really do that for you. When i cook one, i would reserve a part of it in a container, before finally putting the sliced spicy chilis. My husband sometimes don't want to eat spicy food , although it's his favorite, when his hyper acidity attacks.

I am an avid fan of bicol express. I have tried many variations of it and I love them all. Adding some mangoes does seem like a great idea. I will ask my auntie to cook one for me with mangoes. I also tried the bicol express using bagnet as their meat component. It was so good especially when you have a side dish of ensaladang talong using the vinegar from Vigan. yum...yum...

I haven't tasted Bicol Express using Bagnet. I think it will be delicious, considering that bagnet is a very tasty food.

Oh I like eating bicol express as well but not that super spicy just like other people like one of my officemate who is from Bicol. He really like it super spicy and even eat chili pepper.

I don't like it to be super spicy also Ardoy. I like it a bit sweet but mildly spicy. I can eat the chilis if that is the case. When i cook one, i soak the sliced spicy chili in water and remove the seeds. That way, it will be mildly spicy. Besides, i put the chili when the coconut and the pineapple is nearly cooked. That way, the spiciness is only mild. Have you eaten a Bicol Express with lechon kawali as its meat? Try it because it's so delicious specially when its skin crunches as you bite it.

Yes, try this variations. They are delicious. But i like the one with pineapple more. The taste of the pineapple really compliments the saltiness of the recipe.

I guess it's not surprising to notice that new prepared recipe nowadays.Most of the dietitians are trying to combine the original recipe with fruits or other vegetables that adds or enhance it's taste.I do love spicy foods,talking with that,Korean foods is on the list yet it's much ,ore expensive compared to our Bicol express.
