I love to eat delicious things and when I have not much to do, my feet take me to the kitchen. I had to change my cookie recipe to something that looked like the normal cookies, tasted like them but were lighter. I made oatmeal cookies, but changed half of the amount of oatmeal to an only fiber cereal. Instead of sugar, I used Stevia. And I decided that I would put only half the amount of fat (oil instead of butter too). I wanted to share this here as the results were awesome. Many times, changing a recipe a bit can make all the difference as diet goes. Do you do things like this too?

How clever of you to do this. I have made a note of the changes you made. I have cut down on the calories when making a lasagna or any other cheese recipe. I add non fat plain yoghurt to reduce calories and it works well as it is very creamy and no one notices the difference in the amount of cheese. I use yoghurt too instead of full cream in recipes. I may just add a dollop of cream and no one has said you have put in yoghurt.

I don`t use cream at all for recipes, cynth. I have my fair share of cream when I can see it and taste it, but I change it for milk or yogurt in other dishes. Some cheeses have less fat than others. It seems mozarella cheese is better. Check.

I love to bake; I have a convection / microwave oven and I used to bake in this; but after someone else accidentally burning it , it is not as fast as earlier.I want to change it but am in a dilemma whether the traditional baking oven is better than this microwave oven.
COming to the topic, I too love to try out new things but as afar as baking goes I am just taking baby steps in trying out new combinations.I go strictly by what is given in the recipe. But the few occasions where I did try out some new combination were very good.

I prefer convection oven, if you want my opinion, but I`m from the old school. It takes some time for me to change recipes, but little by little I experiment

I have always been adventurous w/my cooking. When i bake i stick pretty close to the recipe but have been known to stray once in awhile. As u know i love to cook so why not make it fun.

This only fiber cereal has made cookies more crunchy. Yummy! On the other hand, the cereal alone is not what I`d call interesting: it is a lot like sawdust. So I feel I discovered a way of turning it into something that can be eaten.

No doubt cooking is an art. It's an innovative art. I appreciate your changing method of cooking without breaking the original form.

I have been doing this formany years as my late husband was a diabetic. When you need to do something, you start trying.

I use splenda instead of regular sugar and I do try not to use butter because of the of the fats. Randy is diabetic so I am always looking for diabetic recipes or if a recipe calls for sugar I use splenda. If you go to the splenda website they have several recipes.

Stevia is made from a plant. Splenda is sucralose. These substitutes for sugar are both a lot better than the old ones.

I seldom bake cakes and tried making a chocolate cake one day as I got the recipe from the net . I did it once and my son commented it to be good and tasty.
However, one of the ingredients is milk. As I do not consume milk, so the second time I baked it without milk . I replaced it with water instead but it did not taste as good with that of milk .

I have a vegan friend who uses soy milk instead of cow milk. Maybe that is an idea. A for mil, I have replaced milk for yogurt and it is a good idea. I make my own yogurt at home.
