Mango Recipe

My father sent a box of mango yesterday. It's from a tree I planted before I left the province and work in the city. The fruit is sweet and delicious. I already gave some to friends and neighbors, yet there still a lot left. What do you think I should do with it? Do you have any recipe that includes mango in it that i can try?

Make it for tiramisu toppings.
Search for the graham cake recipes and ripe mango for toppings will surely make it great.
I love ripe mangoes for graham cakes, toppings and stuff between the biscuits.

Thanks for the ideas! I read these one too late. Didn't have the chance to go online these weekend. The green ones are now ripe so I'll just try the tiramisu. Maybe next year I'll make pickles.

Well, if it is a ripe mango you can make mango float out of it. Or you can have it shake that's so great for this summer season!

I suggest you use a ripe mango for this recipe because the sugar content in the fruit will be higher, giving the dressing a sweet and refreshing edge.
You will need:
- 1/2 cup pureed Champagne® mango (from 1 small mango, peeled and seeded)
- 2 tbsp of coconut milk (available in canned form in most grocery stores)
- 1/2 tsp curry power or massaman curry paste
- Juice and zest of 1 lime
- 1/4 cup white vinegar
- 1 cup vegetable oil
- Salt & Pepper
Directions:
In a home blender or food processor, blend all ingredients together except oil. Slowly drizzle in oil to emulsify the dressing, then add salt and pepper to taste. Transfer to a serving dish or serve over your favorite salad

If you really have a lot of them, try giving out to the needy kids in nearby area. They'd love to get their hands on mangoes. Plus their content hearts will shower blessings on you. All the best ! :)
