Very simply, take any boxed cake, and add twelve ounces of a carbonated beverage. Soda pop. That is one can, or a cup and a half. Stir, pour into a prepared 9x12, bake at 350 F until cake pulls from sides and a toothpick in the middle does not come out doughy. About 35 minutes.
My sister likes strawberry supreme cake mix with strawberry Fanta.
This is very good if you are watching fats and oils and eggs.No calories in the finished product from oil or eggs. Not so good if you have to watch sugars. It is higher in sugar, if you use regular soda. Diet soda works as well.
Save on sugars, and artificial sweeteners by using seltzer water. I like an orange cake, with orange flavored seltzer. I made sugar free orange frosting as well sprinkling in a little orange zest. That was great flavor less sugar.
You can do this with and angel food mix as well. It rises higher. Even lower in fat.
Next time I will talk about an ice box cake. My favorite in the summer.

you answered so many of my questions in your post! thank you! i have seen this recipe posted many times on line (one boxed cake mix, one can of soda, mix and match...)....but i always wondered if you could use diet? and i see you actually used seltzer as well? does the carbonation come into play with the cake mix? or could i just use 12 ounces of plain tap water? i know hat normally these mixes call for egg/oil etc....
how does not using the egg/oil affect the texture of the cake?

It is the carbonation that makes the cake rise, water will not do it. It is not as moist a texture as the cakes with eggs and oil but it is not bad. Since I dislike artificial sweeteners I prefer seltzer.

@GardenGerty so it is the bubbles that matter, not the sweetener.... good to know!........(granted if i am making a CAKE i am probably going to go all out and use "real" soda anyways.........but if it were to come down to what i have in the fridge....nice to know that any bubble soda would work in a pinch ;) )

I'll bet if you made it with Dr. Pepper....it would taste like Cherry Almond cake. Awesome.
