Birthday Cake was a Big Hit

Sunday was my sons birthday. Since it is summer and a hot one too I decided to try something a little different for cake,something summery. I made a lemon cake with a whipped cream frosting and then put raspberries on top. My son said it was the best cake ever and he wanted that from now on for his birthday. For the cake 1 cup butter-softened 2 1/2 cups flour 1/2 tsp baking powder 1/2 tsp baking soda 1 tsp salt 1 1/2 cups sugar 2 eggs 3 egg yolks 2 tbsps lemon juice 1 tbsp lemon zest 1 cup buttermilk Preheat oven to 350 Butter and flour 13x9 pan Mix the dry ingredients plus lemon zest together. In a seperate bowl beat the butter and sugar together until fluffy. Beat in the eggs and egg yolks.Then beat in 2 tbsps of lemon juice. On low beat in the flour mixture and buttermilk. Bake for 25 minutes or until cake is done in center. For topping 1/2 cup sugar 1/2 cup water 1/4 cup lemon juice 1 thinly sliced lemon Put all of it in a pan and simmer for 25 minutes. Remove the lemon slices and add 1/4 cup lemon juice. Poke holes all over the cake and brush the lemon syrup all over the top.Let cool. Frosting 8 oz package of cool whip 1 package lemon or vanilla pudding 1 cup milk 1/4 cup powdered sugar. raspberries for the top Beat the milk and pudding mix together until thick. Beat in the powdered sugar,then fold in the cool whip. Frost and put as many raspberries on top as you like.

Sounds delicious. I love lemon-flavored cakes, cookies, lollipops... etc, everything. I never thought about raspberries with lemon cake, but it sounds like it would be very tasty.
