I have been drying cayenne peppers in the sun for the last couple weeks. I have enough of them dried now, although there are many still growing,to start grinding them.
We use a lot of red pepper flakes for seasoning so I decided to make my own this year.
I also have enough ripe tomatoes to make a batch of freezer sauce.
I use the stuff for chili and goulash in the fall and winter. It makes the taste so much better and fresher tasting.
And it is easy to make,no peeling tomatoes!
You just put onion, jalapeno and green pepper(as much as you want) in the food processor and pulse until they are in tiny pieces. Then chop tomatoes into quarters, throw them in and add a little salt and garlic powder and pulse until it is the consistency you want.
Put the sauce in freezer bags and place in the freezer.
I was a little leery the first time I did this because of leaving the skin on the tomatoes, but it worked out great and we love the stuff.
