Papaya Chutney Anyone?

Here we grow our own papayas and our trees produce giant, delicious papayas. I love to make all sorts of things with papayas. They are wonderful for juicing, making poe, cooking cakes, pies, and bread with. But my all time favorite is papaya chutney. This is so simple and easy to make that you can make it with any fruit you have in your home. I just have a lot of papayas at the moment so I make it with papayas. How many cups of any fruit you wish. Normally I use 10 cups. You can make less or more if you wish. 1 very large kettle. Use a deep one. Now for sweet fruit I would suggest not using more than 1 or 2 cups of sugar. I find it is way to sweet if you do this one. Normally I use much less. For a very large batch such as this I use 2 full garlic which is around 12 to 14 cloves depending on the size of your garlic. Clean and chop fine. Now I take a giant piece of fresh ginger. You will need to adjust for your taste. Why because ginger will make it a little spicy if your not careful. Clean and chop this fine. You will also need some salt and some black pepper corns. Use some cider vinegar for this one - if you don't have then use white but not red wine. I just eye my measuring in this one to get enough. You can also taste it to make sure you have it right. Normally it will take around 2 to 3 cups depending on how much fruit you use. You might need to add 1 cup of water if your fruit isn't so wet like papayas. 1 or 2 onions diced fine. You make the decision on this one. Now here is the simple easy part. Brown ginger, garlic, onions and black pepper corns in some olive oil or cooking oil. Add in your fruit and let cook for around 5 min. Now you check to see how liquid your fruit is. If it is sort of dry add in 1 to 2 cups of water and your cider vinegar. Bring to a boil and reduce heat to simmer. I cover my pot with a screen to let it cook. I normally cook this around 30 to 45 min. You can test this to see when it's done. It should be sort of thick. Now spoon this into jars and you can either seal them or leave them in your refrigerator to use. Normally I put some in plastic storage containers and freeze mine. I love to make chutney chicken, fish, rice, or use it as a dip. I like mine very hot and spicy and it is great to eat with all kinds of foods. Cold papaya chutney in a salad is excellent. So if you want something different try making some chutney. You can also add some raisins to this recipe and make a sweet hot and spicy chutney. Enjoy -

wow that really sounds delious sounds like something that you can snack on how long do you think it lasts?

In sealed bottles in the refrigerator I have kept it fresh for 2 weeks. But most of the time it is gone so fast I haven't really thought about how long it does last. If you make too much just freeze some. It's great frozen too.
