The basic principle of a healthy vegan diet is to consume a variety of vegetables and fruits. These are extremely high in fiber, vitamins and minerals and their amino acids and antioxidants are very beneficial for our body.
Refined and modified food products (so as to keep longer, for example) are synonymous with loss of nutrients. Non-hydrogenated oils, flour and grain products (pasta, rice, bread) and food without preservatives or dyes should be given priority, since they are more complete and have no artificial chemicals. Food from organic farming are more natural and certainly healthier.

@neutral12 I have been on the Mediterranean diet for the last 6 months, off and on and it is very similar to the vegan diet.

@neutel12 I like it because I am not a meat eater. It's not that I don't eat meat but limit it as I sometimes think of the animal and I cannot eat it. The Mediterranean diet is easy as I love fruits, vegetables, and every thing on it. I hope to get on it totally but my husband is not into it like I am.

I could never be a vegan, although most of my diet is fruits and vegetables. I eat meat about 2--3 times per month.
