Defrosting dinner

Cooking while can be enjoyable and rewarding is not my forte. Preparing food for me is an art, like eating not to be rushed. I fortunately am single and only need fend for myself and eat what I want when I am hungry, verses feeding a husband, children or other extended family members. So, I have 2 options and since I will be eating, “Linner,” the meal in between lunch and dinner I will eat option number 2 for dinner. Option 1 - I have 2 slices of hand tossed crust that is especially yummy when it is fresh and a bit crispy from the oven. The pizza is light on the marina sauce, has bacon bits, mushroom, pineapple, and extra mozzarella cheese, cooked well done. Option 2 - is a French roll with roast beef and baby Swiss cheese and au jus for dipping. I made four of them using all the meat and cheese I had purchased and decided since I was making one for dinner to fix them all at once and eat from the freezer. Eating from the freezer is not usual for me, but I guess somewhere in my life something shifted enabling me to be perhaps more confident in the kitchen preparing food for future consumption, LOL. Although I have a microwave and could defrost either of them right now, the thought of that conjures soggy bread and that is completely unappealing! What are you having for dinner?

We don't have a microwave at the moment. But it means that everything is home cooked by my loving husband. Anything that needs to be warmed is done on the stove. It definitely tastes better though!

I prefer old cooking methods over nuking if possible. Sounds lovely to have a loving husband that cooks, lucky!

@JustEmm pork roast can be done in the crock pot, divided up and frozen, just saying!

Yum, just had awesome pork roast ,potatoes and gravy, green beans, peaches and bread that my friends cooked, so good. Since I am single I do not cook like that and it is a real treat when someone does!

I never get to freeze leftovers cooking for two males. There are no leftovers. We had fish and chips.

I do eat pretty healthy most of the time my portions are small and awareness is the key.
