There is More Than Lemonade to Lemons

When I come up with more lemons than sweetness I look for ways to turn things around. One of my favorite ways to use lemons is to squeeze them and use the juice in recipes and drink lemon water. Lemon juice can replace salt which we should cut back on. I love to saute chicken and then squeeze on a liberal drop of lemon juice and for just a bit of some saltiness a splash of soy sauce. There is nothing like it in taste. Some fried potatoes or non-greasy French fries also greatly benefit from a squeeze of lemon.
Of course if you like you can add a pinch of sugar and a teaspoon of grated lemon rind to a bottle of vodka. Shake it well and place it in the freezer. Once it is nice and icy you can drink it straight or add it to your favorite cocktail. It gives it a real nice kind of flavor.
It is great when making salad. Use lemon juice, a bit of soy sauce, add a bit of olive oil or sunflower seed oil and toss through any kind of salad it is just great in flavor. Saves you lots of calories which salad dressings provide. Use it for seafood and fish and lots of different vegetables such as broccoli.
