Pumpkin Spice cookies with ice cream!!!

I bought the pre made philsbury cookies at Thanksgiving. I went back and bought a few packs and froze them because they were so good.
I am baking them now, and was thinking I have some ice cream in the freezing. I will let them cool off, and scoop some ice cream into the middle of them.
I saw an article in a magazine showing this and it really did look delicious.
Have you tried any new recipes lately?

That does sound delicious. I had just told hubby that I want ice cream. We do not have any and I am not going out for any, but you are making me drool.

I am jealous of you right now. 
I haven't tried any new ones lately but I've been thinking about finally making a coconut chocolate pecan pie. 
I love this time of year because I allow myself to splurge without feeling guilty, haha.
